19.01.2022 A CHEESEY APOLOGY I am so sorry to all my cheesemongers as last week I sold out of my 'cheese of the week' in 1 day . So this week I have stocked up to ensure everyone can get a piece of this week's incredible L'artisan Grand Fleuri, an organic cows milk cheese from the farms in the the Great Ocean Road region. I also have Queensland Bunya Black and the Petit Camebert Rouzaire direct from France back in stock. It's white mould, soft cheese heaven . See you tomorrow from 7am at Burleigh Market

18.01.2022 IRISH WHISKEY CHEDDAR This creamy, crumbly Whisky Cheddar hails all the way from Limerick in Ireland. A simple vintage cheddar is made using Kilbeggan Irish Whiskey and then matured for around 9 months into the delicious cheese you see before you. It has a smooth and rich, slightly salty, taste without the whiskey too overwhelming. Originally created for celebrations such as Harvest and Christmas it can now be enjoyed all year around. Perfect on a platter or zhoosh up a sandwich, just don't forget to pair it with your favourite whiskey .

15.01.2022 Wookey Hole 18 month Cave Aged Cheddar Four hundred years ago there was no refrigeration and caves were the ideal place to mature cheeses. Carried by hand two hundred feet underground into the Wookey Hole Caves, in the Mendip Hills, the cheddar is left to mature. The constant temperature and humidity of the Caves offers ideal conditions for storing and ageing cheddar and the porous nature of the cheese enables it to take on the distinctive earthy and nutty flavours fro...m the atmosphere. The texture is firm and the cheese is cream-coloured. The aroma is a complex mix of sweet, creamy, farmy and earthy. The flavours are big, robust and well rounded, with competing notes such as sweet and salty, or earthy and tangy. The Caves’ atmosphere bestows the cheddar with an additional, highly-distinctive, earthy and nutty flavour. Not suitable for vegetarians. The robust, sweet and nutty nuances of Wookey Hole Cave aged Cheddar is perfectly complemented by full-bodied red wines with a strong flavour. The origin of this cheese is Roquefort (Aveyron region) in southern France. The cheese has creamy white colour, similar to Brie cheese texture, easily melting in the mouth, has a distinct, mild taste. I have an incredible double brie style white mould cheese made by a Matthieu Megard who grew up in the French Alps surrounded by classic Alpine cheeses. A third generation cheesemaker he now calls Australia home and selects only the finest organic milk from South West Victoria to make this truly amazing cheese. Come and see me to try this soft, sticky, buttery textured cheese with a mild, creamy flavour with notes of mushroom and delicate hints of garlic chives.
