21.01.2022 This evening, Wednesday 21st October we will be Leaving a Light On’ to help raise awareness of missing persons across Australia. Leave A Light On was created as a tribute by Suzie Ratcliffe to two little girls who were kidnapped from the Adelaide Oval in 1973 Joanne Ratcliffe (Suzie's sister) and Kirste Gordon. After Joanne’s disappearance, her parents would always leave the front porch light on in the hope that if she came home, she would know family were waiting for her.... Leave A Light On asks people across Australia, no matter where they live, to leave a light on in memory of missing persons, and as a beacon of hope for their families their missing loved ones will never be forgotten. It reflects the practice of many families whose loved ones are still missing, and who leave a light on for them each night in the hope they will one day return. The concept launched in South Australia in 2015 but has since spread nationwide, literally shining a light on an issue that affects tens of thousands of families each year. Businesses large and small are being asked to light up their buildings overnight on 21 October. Businesses that already leave their lights on as normal practice are encouraged to change the colour of their bulbs to yellow or blue, share with your employees and promote the event via social media. More than 38,000 people go missing nationwide each year, while more than 2600 people are classified as long-term missing. The reasons for their disappearance are quite diverse - ranging from mental illness or misadventure, to domestic violence or victims of crime. Anyone, regardless of gender, age, ethnicity or educational background, may become a missing person. As a case becomes older, with no new information, missing persons are quite often forgotten. 20.01.2022 FRIDAY FRESH UPDATE || Mango Recipes Sam’s Green Mango Salad Recipe 2 firm Green mangoes ... 2 cups bean sprouts 1/2 cup chopped fresh coriander 1 /2 cup fresh mint 1 1/2 cups green beans diced fresh 1 punnet cherry toms cut in 1/2 3 spring onions, sliced handful of peanuts or cashews, roughly chopped 1/ 2 cup fresh basil Optional: 1 cup cooked chicken or shrimp, or fried tofu if vegetarian/vegan (cut into small cubes) 1 fresh-cut red chilli SALAD DRESSING: 3 Tbsp. fish sauce, OR 4 Tbsp. soy sauce if vegetarian/vegan 1/4 cup freshly-squeezed lime juice 2 Tbsp. brown sugar, or more to taste Preparation: 1. Mix together all the salad dressing ingredients in a bowl or cup. The dressing should be a mingling of sweet, sour, spicy and salty, but more sweet than sour. Set aside. 2. Using a sharp paring knife, peel skin from mangoes. The flesh of the mango should be firm and light yellow 3. Using a medium to large-size grater (the kind you would use for cabbage salad), grate the flesh of the mangoes into a mixing bowl. Keep in mind there is a large flat stone at the mango's centre. 4. Add the bean sprouts, beans, cherry toms, mint coriander, spring onions, cooked chicken, shrimp or tofu (if using), the fresh-cut chilli. Toss well to combine. 5. Add the dressing and toss again. Do a taste-test. Add more fish sauce or soy sauce instead of salt. If you prefer it sweeter, add a little more sugar (honey works too). If you prefer more spice, add more chilli. 6. If too salty or sweet, add more lime juice. 7. Place on a serving platter. Sprinkle the nuts over top plus the basil. Enjoy! Avocado and Mango Salad Lettuce Cups Ingredients Salad: 3 rashers bacon 2 mignonette lettuces 2 mangoes, peeled and cubed 2 avocados, peeled and cubed 1/2 cup (65g) unsalted roasted cashews, roughly chopped Dressing: 2 tablespoons extra virgin olive oil 1 tablespoon lemon juice 1 tablespoon lime juice 1 teaspoon French mustard 1 teaspoon thickened cream Method 1. Trim the bacon and cut into thin strips. Fry in a non-stick pan until brown and crisp, then drain on paper towels and leave to cool. 2. Pull the lettuce apart and wash and dry the leaves. Arrange the lettuce, mangoes and avocado in a serving dish. Sprinkle the cashews and bacon over the top. 3. Put all the dressing ingredients into a small screw-top jar, and shake well to combine. 4. 16.01.2022 Attention all mushroom lovers, you need to try this sauce INGREDIENTS 30 g butter 2 tbsp olive oil... 1 large brown onion, finely chopped 200 g cup mushrooms, trimmed, quartered 200 g Swiss brown mushrooms, trimmed, quartered 2 tbsp plain flour 1 cups beef stock cup thickened cream 1 tsp Dijon mustard 2 tbsp chopped flat-leaf parsley METHOD 1. Heat butter and oil together in a large frying pan over medium heat. Add onion. Cook, stirring occasionally, for 5 minutes, or until soft. Add mushrooms. Cook, stirring occasionally for 5 minutes, or until softened. Sprinkle over flour. Cook, stirring for 1 minute. 2. Add stock, stirring constantly. Bring to boil. Simmer, uncovered over a medium-low heat, for 5 minutes. Stir in cream and mustard. Simmer, stirring occasionally, for a further 8-10 minutes, or until thickened slightly. Stir in parsley. Season. 14.01.2022 Ripening an Avocado Want to ripen your Avocado a bit more? Place the unripe Avocado in a brown paper bag, making sure you check it everyday until it is ripe enough. To tell when an avocado is ripe, feel the stem of the avocado and when it has a little bit of give, it is ripe. The brown bag gives off ethylene gas that is not dissipated but gets trapped when you place Avocado in the bag causing it to ripen fast. Similarly, you can ripen any unripe fruit using the brown bag fruit hack.

06.01.2022 Now that Spring has arrived and the weather is starting to warm up, salads are a great light, healthy meal option. With our new range of Beerenberg sauces, they have come up with a mouth-watering fresh watermelon salad with feta and mint paired with their delicious honey mustard dressing. All of the ingredients to make this recipe are available to purchase in store or online.... Ingredients: 500g watermelon bunch mint, leaves picked red onion, finely sliced large handful baby salad leaves 3 tablespoons Beerenberg Honey Mustard Dressing 120g Danish feta Method: Remove the skin from the watermelon and cut into small wedges. In a large bowl, toss the watermelon, mint, red onion, salad leaves and Beerenberg Honey Mustard Dressing. Place in a serving bowl and crumble the feta on top. Try making these delicious frozen banana popsicles Firstly, take some ripe bananas and put a wooden popsicle stick through the bottom of the base, just make sure you don't break the banana. Then, dip the bananas into some melted chocolate or yogurt and top with nuts, sprinkles, chocolate chips, or anything else that your child's heart desires. Finally, place the bananas on a baking tray and put them in the freezer for around three hours before treating your kids to one of the best-frozen treats.
