15.01.2022 It was a ‘Can’t be super bothered but want all the things’ kind of dinner. Chicken - drumsticks and a breast cut in 3 Cherry tomatoes, halved big mushrooms, few olives and capers. Lemon thyme and parsley. And someone left an annoyingly tiny few slices of salami in the fridge, so that got torn up and popped in too. All in the oven then some feta sprinkled over when it’s done. ... You could leave out any of these things, it wouldn’t matter. Probably don’t leave out the chicken. Also put the broccoli and kale in the rice pot when the rice is nearly done. Saves a pot. 12.01.2022 Even though it can be amazing ‘Fish Pie’ never really sounds that great. This fish pie was the best one I’ve ever had. It could be improved by better fish and maybe a couple of prawns and scallops. Beyond the standard onion/carrot/celery and béchamel what really bought it home was the addition of lemon zest, tiny capers and a slug of Noilly Prat (did steal that suggestion from a Gordon Ramsay recipe) a generous bunch of lemon thyme and a layer of butter fried til soft sliced... baby potatoes. The pots could have been filled to the brim as well - they were bigger than I’d allowed for! 100% will make again! Totally impressed myself while eating this one, and I’m a pretty tough crowd when it comes to judging my own dinner (only if I make it!!! 07.01.2022 Ok, yes. Tempura Vegetables are deep fried vegetables. We don’t deep fry our entire meal every night. We don’t even want to. Worth it though. This was the most successful batter to date and I thinks it’s because I researched properly and didn’t just say ‘I could make that’... Freezing the flour and keeping the batter super chill was the first big tip. Second was only just incorporating the flour - hardly stir it at all. Third was getting Alex to do all the frying, that hel...ped immensely. I can’t honestly share a recipe here.
