23.01.2022 Chocolate Zucchini Brownies Recipe Shandell @iamshandell has created a delicious, healthy brownie by adding hidden vegetables in it. Perfect for the fussy eater! Ingredients 1 cup zucchini 1 egg... 1/2 cup tahini, can substitute for a gooey almond butter 1/2 cup cacao or 100% cocoa, if you are keen for a darker chocolate brownie you can use a mix of both 1/4 cup maple syrup 1/2 cup coconut sugar 1/2 tsp vanilla 2 tbsp coconut flour 1/2 tsp baking soda Pinch himalayan salt 2 tbsp melted coconut oil 1/2 cup dark chocolate chips or dark chocolate roughly cut (Shandell used @loving_earth chocolate to keep it refined sugar free) Optional - crushed walnuts if you like that extra crunch Method 1. Preheat oven to 170c 2. Line your baking tin with baking paper 3. Grate zucchini 4. Using your hands, sift or use a muslin cloth, squeeze excess water from your zucchini 5. In your bowl add zucchini, egg, tahini, pinch of salt, vanilla, maple syrup, coconut sugar 6. Stir until mixed smoothly 7. Now slowly begin to add in your cacao or 100% cocoa, continually stirring 8. Add baking soda, coconut flour & melted coconut oil 9. Add chocolate chips or roughly cut chocolate 10. Mix until consistency is smooth and a batter texture 11. Optional to fold in walnuts 12. Next step always taste a sample, how can you not when baking (clean the spoon) 13. Pour batter into lined baking tin 14. Bake in oven on middle shelf for 30-40 minutes, depending on how gooey you like your chocolate brownie, keep an eye out until you notice some cracks on the top 15. Ingredients ... 1 Cup gently melted Cacao Butter 2 Tsp Maca Powder 1 Cup Cacao Powder - we used Cacao Gold 1 Cup organic almond butter 1/2 Cup Golden Berries 1/2 Cup Goji Berries 3 Tbs Cacao Crunch or Cacao nibs 2 Tbs Chia Seeds 1 Cup pure maple syrup or rice malt syrup 1/2 Tsp vanilla extract Pinch of salt Method 1. Place all ingredients except the Golden Berries and Goji Berries, Nibs and Chia into a food processor and blend (you could also use a stick blender) 2. Mix in the super berries. Pour and spread into a lined 20 x 20 cm tin and sprinkle with Chia Seeds and Cacao Nibs. 3. Place in fridge to set - fudge should set fairly quickly 4. Slice into small pieces and serve at room temperature Enjoy!

18.01.2022 Peanut Butter Protein Cookies (Vegan & GF) An easy 6 ingredient recipe! Wet Ingredients: 1/2 cup smooth peanut butter 1/2 cup coconut milk (from a can)... 1/2 cup maple syrup Dry Ingredients: 1 cup @pbfit.aunz peanut butter powder 1 cup gluten-free oat flour 2 teaspoons baking powder Pinch of salt (only if your peanut butter is unsalted) Extras: 1/2 cup dark chocolate chips (for drizzling) METHOD: 1. Preheat the oven to 180C degrees. Line a baking tray with baking paper, set aside. 2. In one bowl, stir together all the wet ingredients. In a second bowl, stir together all the dry ingredients. Add the wet ingredients into the dry and stir to combine. 3. Using a heaping tablespoon of the batter, roll it onto a ball and place it on the baking sheet. 4. Repeat with the remaining dough, leaving about 3 inches between cookies. Use your hand to gently flatten the cookies into plump round discs. 5. Bake for 12-14 minutes or until the edges begin to turn golden brown. 6. Remove them from the oven and let them cool on the baking tray for 5 minutes. Move them to a cooling rack and let them cool completely. 7. Once the cookies are cooled, melt the dark chocolate chips in the microwave at 50% power, stirring every 30 seconds. Once the chocolate is melted, use a spoon or a piping bag to drizzle it over the cookies. 8. Let the chocolate set and then serve. Enjoy! 16.01.2022 Try this delicious Gluten free + Dairy free Recipe by @pbfit.official - Quinoa Chocolate Peanut Butter Muffins Ingredients For peanut butter batter: 1 cup cooked BBF quinoa... 1 Tablespoons BBF Oat Milk 1 egg 1 teaspoon vanilla extract 3 Tablespoons BBF avocado oil 1/4 cup BBF Coconut palm sugar 1/2 cup BBF PBFit peanut butter powder 1/4 teaspoon baking soda 3/4 teaspoon baking powder 1/4 teaspoon salt For chocolate batter: 1 cup cooked BBF quinoa 2 Tablespoons BBF Oat Milk 2 eggs 1 teaspoon vanilla extract 6 Tablespoons BBF avocado oil cup BBF Coconut palm sugar cup BBF Cacao powder teaspoon baking soda 1 teaspoon baking powder teaspoon salt Method 1. Pre-heat oven to 190C degrees. Pan spray and paper line a muffin tin. 2. Prepare peanut butter batter first. 3. Combine peanut butter powder, baking soda, baking powder and salt. Set aside. 4. In a blender, combine eggs, oat milk and vanilla extract and blend on low for 30 secs. 5. Add in cooked quinoa and blend till smooth. 6. Add in avocado oil and coconut palm sugar and blend until smooth. 7. Add in remaining dry ingredients and blend until smooth. 8. Pour muffin batter into separate bowl. 9. Now prepare the chocolate batter. 10. Combine cacao powder, baking soda, baking powder and salt. Set aside. 11. Repeat Steps 3 8 for chocolate batter. 12. To marble, layer small amount of chocolate batter, then small amount of peanut butter batter in each liner, layering until all the batter is gone. 13. Bake for 20-25 minutes. 14. Serve and Enjoy!

Simply combine dried banana chips with your choice of extras (coconut/dried fruit/cereal/nuts). 2. Stir through with melted peanut butter. 3. Lay flat on some baking paper. 4. Drizzle over melted dark chocolate. 5. Pop in the freezer for 10-15 mins to set. 6. Slice and enjoy! P.S. Dont stress too much about specific measurements of each ingredient, simply add more/less of what you desire to get the perfect bark especially for YOU!
03.01.2022 Lemongrass Stir-fried Udon with Bean Sprouts Recipe Ingredients 1 packet udon or noodles of choice, cooked according to package instructions 1/2 onion, sliced... 1 tbsp lemongrass, finely chopped 1 clove garlic, minced 1/4 cup shelled edamame 1 vegan sausage or protein of choice Handful of bean sprouts Sauce 2 tsp @niulife coconut amino sauce 1 tsp rice wine vinegar 1 tsp toasted sesame oil 1 tsp sweetener 1 tbsp water Topped with roasted nuts Method 1. Prepare sauce ingredients and cook noodles and set aside. 2. Cook onion, garlic and lemongrass in a pan with oil until golden brown. 3. Add protein of choice (I used edamame and vegan sausage here) and cook until slightly brown. 4. Stir in cooked noodles and sauce and cook until liquid is mostly absorbed. 5. Toss in bean sprouts and turn off the heat, stir quickly so that they are slightly wilted. Serve warm with chilli powder and roasted nuts if desired.

Ingredients Just under 1 cup dates (soaked for 15 minutes in hot water) Salted caramel chocolate bar @loving_earth ... 1 cup desiccated coconut 3/4 cup almond meal Pinch of cinnamon and salt 1/4 cup salted vanilla protein 1/2 tsp vanilla 1 tsp maca powder (optional) 1/4 cup peanut butter @byronbaypeanutbutter 1-2 tbsp almond milk ( if required) Method 1. Pulse all the ingredients in a food processor until a soft dough forms. If the mixture appears crumbly, add a tbsp of almond milk. 2. Transfer the dough into your silicone donut moulds and place in the freezer to set for 1-2 hours. I like to roll the dough into tubes with my hands so I can push it around the moulds. 3. Once they are set, coat in melted salted caramel chocolate and transfer to a lined baking tray. 4. Immediately top with golden granola. 5. Set in the fridge for 20 minutes and enjoy! Note: The donuts are quite sweet so do not use any additional sweetener, you can use less dates if you are not a big sweet tooth.
