20.01.2022 BAKED PASSIONFRUIT TART Ingredients 225g (1 1/2 cups) plain flour 60g (1/3 cup) icing sugar mixture... 125g chilled butter, chopped 1 egg yolk 2 tablespoons chilled water 250ml (1 cup) thickened cream 100g (1/2 cup) caster sugar 4 eggs 160ml (2/3 cup) passionfruit pulp Method Process the flour, icing sugar and butter in a food processor until the mixture resembles fine breadcrumbs. Add the egg yolk and water. Process until the dough just starts to come together. Turn onto a lightly floured surface and knead until smooth. Roll out the pastry on a floured surface to a 4mm-thick disc. Line a 3.5cm-deep, 22cm (base measurement) fluted tart tin, with removable base, with the pastry and trim any excess. Place in the fridge for 30 minutes to rest. Preheat oven to 200C. Place tin on a baking tray. Line the pastry case with baking paper and fill with pastry weights or rice. Bake for 10 minutes. Remove the paper and weights. Bake for a further 10 minutes or until crisp and light golden. Meanwhile, whisk the cream, caster sugar and eggs in a medium bowl. Stir in the passionfruit pulp. Reduce oven to 160C. Pour egg mixture into the pastry case. Bake for 35 minutes or until set. Place in fridge overnight to chill. See more

12.01.2022 Passionfruit custard slice Ingredients 200g packet Arnott's Lattice biscuits 1/3 cup Foster Clark's custard powder... 2 cups milk 1/4 cup caster sugar 1 cup icing sugar mixture 1 passionfruit, halved Method Grease a 3cm-deep, 16.5cm x 26cm (base) slab pan. Line base and sides with baking paper, allowing a 2cm overhang at both long ends. Place 12 biscuits, in a single layer, in pan to cover base. Combine custard powder and 1/4 cup milk in a saucepan. Whisk until smooth. Pour in remaining milk. Add sugar and place pan over medium heat. Cook, stirring constantly, for 5 minutes or until custard comes to the boil. Cook, stirring constantly, for 2 minutes. Remove from heat. Cover surface of custard with plastic wrap. Set aside for 30 minutes to cool slightly. Pour warm custard over biscuits. Top with another layer of 12 biscuits. Refrigerate for 1 hour or until set. Sift icing sugar into a bowl. Add 1 tablespoon passionfruit pulp. Stir to make a thick icing, adding more pulp if required. Spoon icing over slice. Refrigerate for 1 hour or until icing sets. Cut slice into squares, using shape of biscuits as a guide. Serve.

06.01.2022 Coconut and passionfruit self-saucing pudding Ingredients 1 cup self-raising flour 1/2 cup caster sugar... 1/2 cup desiccated coconut 2/3 cup light coconut milk 1 egg 80g butter, melted, cooled pure icing sugar, to serve Sauce 1/2 cup caster sugar 3 teaspoons cornflour 1/2 cup milk 2 small lemons, juiced 3 passionfruit, halved Method Preheat oven to 180C. Grease a 6-cup capacity, 5.5cm-deep, 19cm x 25cm (base) ovenproof dish and place on a baking tray lined with baking paper. Sift flour into a bowl. Stir in sugar and coconut. Whisk coconut milk, egg and butter together in a jug. Pour into flour mixture. Gently stir until combined. Spoon into prepared dish. Smooth surface. Make sauce: Combine sugar and cornflour in a bowl. Sprinkle over pudding. Combine milk and 1/3 cup lemon juice (don't worry if mixture curdles) in a small saucepan. Cook, stirring, over medium heat until mixture comes to the boil. Remove from heat and stir in passionfruit pulp. Pour hot lemon mixture over the back of a large metal spoon, over pudding. Bake for 50 to 55 minutes or until a skewer inserted halfway into pudding comes out clean. Dust with icing sugar and serve immediately. See more
