25.01.2022 Do you love Nando's??? Yep, thought so. When you cook chicken like this you are using an amazing array of herbs and spices that have medicinal qualities, AND, it tastes amazing!! Here is an easy chicken marinade to give you your peri peri fix. Just mix it all to together, marinate your chicken and cook on the bbq , cooktop or oven.... I took a whole chicken, cut all the way through the backbone, layed it out and flattened it (in our house we call it road kill chook ). You could use any chicken... tenders, kebabs, thighs, drumsticks, wings.... The easy version is to mix together: 2 teaspoon of dried oregano 1 teaspoon paprika 1 teaspoon salt 1 teaspoon cumin 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon ground coriander Juice of one juicy lemon Rub it into the chicken, let it marinade for a few hours or overnight then cook what ever way yout want. If you want to be extra fancy, chop 4 garlic cloves, grate half an onion and finely chop fresh oregano. Use these instead of the powdered/dried options. 24.01.2022 My family is double lucky.... every year we get 2 Christmases and 2 Easters (double eating and celebrating as well ). Our kids Baba (which is grandmother in Macedonian) makes Kifli at every celebration. It's a breaded pastry filled with cheese. But our kids call them "Baba rolls" because they are rolls that Baba makes We can't go to Baba's house today so we called Baba and asked her how to make Baba rolls because you have to have Baba rolls at orthodox Easter!... Happy Easter to those who are celebrating today. Eating... again!!

24.01.2022 RECIPE BELOW: I have a new rule for our kids... they're not allowed out of their rooms till 8am. I've bought them a battery operated digital alarm clock each (kmart) and at 8am (on the dot!) I hear them come out of their rooms. ... I did this because I needed it. Otherwise, they are up early, bouncing around me, asking what's for breakfast, asking if they can quickly look at something on their tablet, asking if I want to play a game of uno... just asking random stuff! At the start of the year, this wouldn't of bothered me, but these days, just give me an hour to myself please, and this new rule gives me that. I can get myself ready, wash any dishes from the night before (yes, guilty, but don't care), and make breakfast. I'm a big believer of a hearty breakfast, especially for kids. So, here is my breakfast/brunch frittata. The recipe below is how I usually make it (didn't have any bacon or pumpkin today ( but life will go on). In a fry pan fry 1 chopped onion and some bacon. When the onion is soft and sweet, add some broccoli. Quickly toss through, than add a small splash of water and quickly put the lid on for 1 minute!. This steams the broccoli without making it soggy. Take the lid off and turn the heat off. At this stage, I like to add some left over roast potato and pumpkin if I have any. In a bowl mix together 12 eggs beaten, 1 grated large sweet potato, 1 cup grated cheese, large bunch parsley leaves chopped and some salt and pepper. Pour this over the broccoli mixture, spread it out evenly and put into the oven at 180 for approx 40min or till cooked. Keep leftovers for lunch the next day Just to finish off, in their rooms our kids have found a way to keep themselves busy. They read, draw, rearrange their toys, or just stay snuggled in a warm bed. For many of us who are home, there is no need to rush in the mornings right now. Take advantage of it, lazy mornings are good for you, so enjoy them without the guilt.

I do this when our house gets a bit crazy. I find that everyone starts listening subconsciously and it mellows everyone down a bit. ... 23.01.2022 A bit of origami, some soil, seeds and a plastic container is all you need to start your mini greenhouse A few months ago, seedlings to grow your own food sold out. I hope you're all still on the "grow your own food" train, because in the end your food will be more nutritious, taste better and grocery bills will go down. It also teaches kids what real food is (they need to cook for themselves one day so they might aswell learn about food now) . Now is the time to start y...our spring seedlings! They need a warm environment to germinate, which is what a greenhouse does. AND, a plastic container will do that for you! It will allow the sun to shine through and trap the warmth inside. After a few weeks you will see your seeds begin to sprout and by late September they should be good to go Even if it's just one plant in a pot, it will give you endless produce. If you don't have pots, use your daughter's old school work (like I did ) and make origami ones. Keep the plastic container in a super sunny spot and spray with water or fertiliser every few days. When ready, put the whole paper pot in the ground as the paper will decompose. Good luck! 22.01.2022 Sweet corn, zucchini and cheese fritters Cleaning out the fridge and pantry again. The best thing about these are the eggs (and they taste great too). I'm always talking about eggs. I think they are awesome for breakfast. They...... contain choline so the body can make the neurotransmitter, acetylcholine, which is great for memory and anxiety are high in protein so you can concentrate for longer are full of healthy fats (your brain is made of fat so it needs nourishment from good fats) contain vitamin D which is ESSENTIAL for your immune system (the chickens must be free range and in the sun) So, in a bowl mix: 4 eggs 5 tablespoons of flour Half a tsp of baking powder add in: 1 420gm can drained sweet corn kernels 1 cup grated cheese 1 bunch of parsley finely chopped 1 grated large zucchini (put in a colander first for 10 min then squeeze out the liquid) 3 spring onions finely chopped Add some salt and pepper for flavour and drop spoonfuls of the mixture into a hot pan with olive oil. Breakfast, lunch, dinner... doesn't matter when you eat them. 20.01.2022 Back when all this began, towards the start of the year, there were a lot of deaths occurring that were caused by this virus but in a very different way, and unfortunately, they were not being talked about or acknowledged. This screenshot is from the ABC news summary of Dan Andrew's update yesterday. A lot of people will say suicide is a choice. Personally, I believe that a person needs to be hurting really bad and honestly feel like the only way to end the hurt is to end th...eir life. I wouldn't call it a choice, I would call it pain, suffering and desperation when they feel they have no other option. And it's not because they are weak. Suicide is already the leading cause of death in males between the age of 15 and 44. That's heartbreaking, and now we have this. Heads up everyone, listen to that friend who wants to talk and let them vent, check in on your teens and if you need to talk yourself, the numbers to call are in the pic below.

20.01.2022 Want to know the best food for your gut bugs..... read on I've talked a lot about gut bacteria, so let's sum up what we know so far... Gut bugs (intestinal bacteria):... *can communicate with the brain *regulate your immune system *are connected to anxiety *can be a reason why you're always tired *are linked to allergies *are responsible for creating neurotransmitters (serotonin and dopamine) *can be the reason why you're always sick (if you don't have enough of them) ... and there's more, it's a really long list. 14.01.2022 Fall in love with your spice rack! I prescribe medicinal herbs in my clinic all the time. I make up a mix and formula to suit my patients needs and all they have to do is take a few mls each day in water or juice. There are herbs that can... reduce inflammation improve cognition thin mucus are antibacterial stimulates libido reduce fever restores liver cells increase breast milk production improve thyroid function alleviate anxiety are antiviral support the immune system This really is just a snapshot of some of the actions of medicinal herbs and the point I'm trying to make is that they can be helpful for every disease, disorder and syndrome. But herbs and spices are nothing new when it comes to medicine. Different cultures have been using them for thousands of years in their cooking. Get your spices out and get creative with them. Here I made a spice rub for some barramundi that we had for lunch. It is : 1 tsp cumin 1 tsp ground coriander 1 tsp oregano 1 tsp turmeric Good crack of black pepper Pinch of salt Rub it into the fish fillet and cook on the stove top. Asian and Middle Eastern dishes are known for their amazing use of herbs and spices. They are also crazy delicious!! Get creative.

I did that yesterday and I'm so fine with it. Don't know what to say right now, just that it's alright to have a bad day. That's normal. It just can't be a bad day every day...... This literally brought tears to my eyes as he explains, so beautifully, how our microbiome shapes who we are and how we interact with the world. More importantly, he points out how our diminishing microbiome is making us become disconnected from each other and society. The respect I have for microbes in us and around us is pretty high... this just took it up to whole other level. A lot of people think ...that to have a healthy microbiome you just need to eat fermented food. Oh baby, it is soooo much more that that! We get our microbiome from the environments that we touch, the people we hug, the outside air that we breath and the way we connect with nature. Unfortunately we are seeing a constant, dramatic decrease in microbe diversity on the earth, daily, and it's a really big problem. 06.01.2022 FREEBIE- read to the bottom: Effects of stress... the list is long! Gut issues, hair loss, weight gain, insomnia, anxiety, fatigue, impacting on relationships... I could go on and on. It's been an interesting year and here in Victoria, we really felt it. There's no magic pill for stress, BUT, there are many supportive strategies that help us deal with it.... I think this year we have really seen that it can also be a game of stamina. Husband working in one room, kids back to school in another room and I can now add teacher to my list of daily duties So it's lunch time and I've raided the pantry and fridge to make a tuna mayo salad that's a hit 1 large drained tin of tuna... Finely chopped spring onions Grated carrot Fresh cooked corn kernels Finely chopped fresh parsley Chopped sweet and sour gherkins/cucumbers And a big dollop of good mayo Salt and pepper Mix it all together and dig in with rice crackers, chopped veggie sticks or even load it onto a piece of toast with a fried egg on top. With this lunch you can tick off...
