03.01.2022 FOODIE FRIDAYS #5: YIA MAS TAVERNA, ST PETERS When an eatery IS THAT good, it does not matter how many times you go there, you just keep returning again... and ...again... and again!!! And what keeps drawing us there...??? We just know that we always get the best there; the best service, the best food, the best atmosphere... And Danny Kladis and Harry Koutsospyros’ Yia Mas Greek Taverna at St Peters is just one of these eateries!!! I distinctly remember the wow factor of YIA MAS Taverna’s opening in 2009; YIA MAS was part of that wave of Greek Tavernas opening across Sydney, mixing authentic Greek food and music in a contemporary setting. But what blew us away back then, and continues to blow us away is the succulent meat off the souvla... At the time, Danny and Harry brought the souvla back... and this time, into the mainstream Australian cuisine! Asked what motivated Danny and Harry to open a Greek eatery and both agree that they used to eat at so many other Greek eateries and believed they could come up with a great eatery too. ‘We grew up with Greek food all around us, and we just wanted to capture all these great tastes and essences in our own eatery and let our customers to enjoy them too.’ Why St Peters? Both Danny and Harry are local; while Danny grew up in Tempe, Harry grew up in Dulwich Hill/ Marrickville, and they believed the inner city needed a great Greek eatery. And what about the name, YIA MAS? As Greeks know, when we make a toast and say ‘To your health...’, it is ‘Stin Ygeia Mas’ and they wanted to establish an eatery where their customers would come and enjoy themselves so much that there would be so many toasta, ‘YIA MAS!!!’ TIM Products’ John Manis features prominently in the YIA MAS’ establishment and both Danny and Harry acknowledge his advice and support. Just love it when Greeks help out Greeks... Since 2009, YIA MAS has never looked back! With such a strong reputation among food and dining connoisseurs, what is their secret? What is emphasised by Danny and Harry is... ‘NO SHORT CUTS.’ Every ingredient and food is of the highest quality, whether hand selected meat or seafood and meticulously prepared and done properly. They point out that customers can taste the high quality ingredients and they cannot be fooled by cheaper alternatives- which ultimately compromises taste. As they point out, they receive meat and seafood deliveries five times a week, which guarantees the meat and seafood is always fresh! And I have to return AGAIN to that souvla!!! As customers, we taste hot and juicy meats but it is definitely a long process to achieve such a great taste. As Danny and Harry point out, ‘Even before we get the charcoal ready at 1pm, the meats have been prepared and marinated, and we put the meats onto the souvla at 2pm. And the meats are ready by 6.30!!! As they say, ‘NO SHORT CUTS.’ Off the souvla, the lamb, chicken and pork is simply amazing... What I personally love about the background of YIA MAS’ menu is that all the recipes are from Danny and Harry’s respective families!!! And it is wonderful to listen to them acknowledge that this recipe is from mother(s) and that recipe is from aunt(s), which reinforces this notion that Danny and Harry grew up with these tastes and aromas, so you get a strong sense of family and community behind this taverna’s decor. Sitting down with Danny and Harry, and they are just passionate about what YIA MAS represents; as they point out, ‘So many of us pride ourselves when we prepare and cook a family barbeque because we wish to please our family, relatives and friends. We operate YIA MAS with that same attitude and spirit; we imagine our customers at our family barbeque so we just wish to please them too, because we treat everyone like our own people.’ Keep the souvlas turning....
