25.01.2022 MATCHA (GREEN TEA) SHORTBREAD COOKIES Recipe by Akikobay 2 cups bleached all-purpose flour -1 -2 tablespoon green tea powder (matcha -- See Note 1)... -1/2 teaspoon salt -1 cup butter (unsalted at room temperature -- See Note 2) -1/2 cup powdered sugar (more if your tea is very intense) -Sift the flour, powdered tea and salt into a bowl. In a mixer bowl, beat butter and powdered sugar until fluffy. -Add flour mixture to mixer bowl and mix slowly until dough just comes together. -Pull dough together carefully in a log, approximately 2 inches in diameter. -Wrap dough log and place in freezer for 30 minutes or until the dough has firmed to the touch. -Slice dough into 1/4 inch rounds and place on a parchment or Silpat lined cookie sheet, approximately 1 inch apart. -Bake in a preheated 325 degree F oven for 16 to 18 minutes (or until the cookies are just starting to turn golden around the edges), turning the pan halfway through the baking time. -Remove cookies immediately from the cookie sheet and cool on a wire rack. -Store in an airtight container or wrap well and freeze. The well-chilled cookie dough can also be rolled out and cut into desired shapes before baking. NOTE 1-- powdered green tea is not merely green tea that has been pulverized in a food processor or food mill, it's a special kind of tea that has been prepared to dissolve nicely. NOTE 2-- don't use the microwave to soften the butter, room temperature butter is the correct consistency for this recipe.

20.01.2022 Thick Soy Sauce - Thick soy sauces (also called soy paste or soy jam) are sweeter and have a thicker consistency than dark soy sauce. That is due to the addition of sugar, more wheat in the fermentation process, and, sometimes, a starch thickener used to make it. It takes only a small amount to add flavour to fried rice dishes. If you cannot find thick soy sauce, it's rather easy to make yourself using light soy sauce.

16.01.2022 Light Say Sauce - Used in stir-fry sauces, marinades, soups, and even dipping sauces, light soy sauce is the most common type used in Chinese cooking. Its what most North Americans would think of as "regular" soy sauce. You can use it whenever a Chinese recipe calls for "soy sauce," without further clarification.

16.01.2022 Sponge Cakes have ingredients that are so basic yet it is not easy to make at all. It is believed to be the first unleavened item made and usually, it is the first cake for any beginning bakers like horse stands are to Chinese kungfu. To qualify as a good sponge cake, it needs to very soft, moist yet light, a little like cotton candy. The whole cake will have very even airholes and hence be making it airy fluffy and the texture fine. It looks plain yet it is flavourful and no...t many people can refuse a good sponge. So this Pandaroo Ovalette will help you make a perfect sponge cake. Ingredients: 8 eggs, separated 1 1/4 cups granulated sugar 3/4 cup liquid vegetable oil 1 tsp. vanilla extract 3/4 cup coconut milk 1 tbsp. Ovalette sponge cake stabilizer 3/4 tsp. Pandan extract 1 cup self-rising flour 1/2 tsp. cream of tartar Instructions: 1). Preheat oven to 350 degrees F (180 degrees C). 2). In a small bowl, combine coconut milk, pandan extract Set aside. 3). With an electric mixer OR by hand, beat the egg yolks, sugar, vegetable oil and vanilla until well combined. Beat in coconut milk/pandan extract mixture. 4). Sift the self-rising flour three times into a large bowl. Make a well in the centre of sifted dry ingredients, and whisk egg mixture into the flour mixture. 5). With an electric mixer, beat the egg whites until frothy. Add the cream of tartar and beat until firm peaks form. Fold the beaten egg whites into the flour/egg yolk mixture in two batches using a balloon whisk or rubber spatula. 6). Gently pour the batter into a 9 or 10-inch (23-25 cm) ungreased tube or angel food cake pan. With a spatula, spread batter to even out the top. Bake in preheated 350 degrees F (180 C) oven for 45 minutes or until the cake feels spongy to the touch. 7). Remove cake from oven, and carefully invert the pan (upside down) onto a cooling rack. Do not remove cake from pan until completely cooled. Once the cake has cooled, run a spatula around the sides and centre tube of the pan to release the cake. When you are ready to slice the cake, use a thin sharp knife with a serrated blade, and cut with a "sawing" action opposed to slicing through the cake. 8). If desired, dust the top of cake with confectioners' sugar, and serve with whipped cream and fresh fruit. 9). Store cake at room temperature (covered with foil or plastic wrap, or cover with a glass cake dome) for up to 3 days. Makes one (9 or 10-inch) chiffon cake.

It has a richer, sweeter flavour, thanks to a longer ageing period and the addition of caramel and sometimes molasses. Dark soy sauce is used to lend flavour and enhance the colour of a dish, for example, in red-cooked dishes. Youll frequently find it paired with light soy sauce in recipes as well.

11.01.2022 Japanese Soy Sauces, or Shoyu- Japanese-style soy sauces, known as shoyu. Traditional Chinese soy sauces were made with 100% soy (some modern Chinese soy sauces contain wheat too). When the brewing method made its way to Japan, the recipe was modified to use an even ratio of soybeans and wheat, resulting in a sweeter, less harsh flavour. Japanese-style soy sauces tend to be clearer and thinner than Chinese sauces.

09.01.2022 Recipe Sweet and sour ribs (, tang cu xiao pai) Sweet and sour ribs (, tang cu xiao pai) is a famous Shanghai dish are always welcomed from my OZ husband and my fussy kids. super easy to do yet very delicious with steam rice. If you have problems with the ingredients come to visit us at Yuen's Market Calamvale ... Ingredients 2 lb pork short ribs 2 tablespoons oil 3 tablespoons sugar 2 tablespoons soy sauce 1 tablespoon dark soy sauce 2 tablespoons Shaoxing wine (rice wine) 3 tablespoons Chinkiang vinegar (brown rice vinegar) 2 cups chicken stock 4-5 dried chillies, optional 3 slices ginger 2 green onions, sliced into 4 sections 2 Star anise Instructions 1. Put pork ribs in a pot and pour water to cover. Bring it to boil and cook for 4-5 minutes over high heat. Drain and rinse under hot water. Put them in a colander and set aside. ( I highly recommend this step as it will get rid of unclean residue on the bones and remove some of the fat as well. ) 2. Heat 2 tablespoons of oil in a wok or a large skillet. Sprinkle sugar and let it caramelize over med-high heat as you stir. When the sugar turns red, add the pork ribs quickly and stir to coat. Keep stirring for 3-4 minutes. 3. Add the soy sauce, vinegar, chicken stock, chillies, ginger, star anise and green onion. Cover with a lid and bring it to a gentle boil, then reduce the heat to low and simmer for 30-40 minutes. 4. Uncover the wok and remove the ginger and the green onion. Raise the heat to high and thicken the sauce as you stir occasionally. 5. When the sauce starts to thicken and turns into a glaze, reduce the heat a little so that you don't burn the sauce. Continue until it becomes a very thick glaze to coat the ribs. Remove from the heat and garnish with toasted sesame oil and chopped green onion, if you wish. 6. Serve warm with rice.

08.01.2022 <3 Homemade Spring Roll <3 Secret Dipping Sauce Recipe ....Sh..Sh... glass Noodles - 110 Grams Cabbage, finely sliced - 100 Grams White Pepper - 2 Teaspoon... Carrots, grated - 100 Grams Spring Roll Wrappers - 12 Refined Flour or Cornflour - 1 Tablespoon Black Fungus Julienned - 4 Bamboo Shoot Julienned 1 Cup Salt, Soy Sauce, Sesame Oil, Chicken power, and Sugar to taste Also can put mince of your choice (Marinade) or Prawn Steps Step 1 - Soak the glass noodles in warm water till soft Step 2 - Meanwhile, heat oil in a wok and once hot, add carrots and cabbage and toss till the moisture has evaporated. Step 3 - Then, add Salt, Soy Sauce, Sesame Oil, Chicken power, and Sugar to taste and stir-fry for another 2-3 mins. Step 4 - Now, drain the noodles completely and add to the wok. Step 5 - Mix well and cook for another 3 mins so that the mixture becomes dry. Step 6 - Turn off the heat and keep aside. Step 7 - Make a thick glue-like paste with flour and enough water which will be used to bind the end of the spring rolls. Step 8 - Now, place once spring roll wrapper on a flat surface with one corner facing towards you. Step 9 - Place a heaped spoon of glass noodle mixture on the corner facing you and start rolling the wrapper slowly but tightly. Fold in the sides of the roll as you proceed further. Step 10 - When you reach the other corner of the roll, apply a bit of the flour paste and roll the remaining part so that it sticks together. Step 11 - Similarly, prepare the remaining rolls. Step 12 - Heat sufficient oil in a wok or deep pan for frying. Step 13 - Once hot, fry the rolls till golden brown. Keep turning the rolls in the process to ensure even cooking. Step 14 - Drain on an absorbent paper and serve hot with dip of your choice. Sweet and Chilli is not a bad choice as a dipping sauce, but my favourite is the Worcestershire-based dipping sauce. Its a little tangy and goes nicely with the fried spring roll. Yumcha in HongKong is service this dipping sauce. For the dipping sauce: 2 teaspoons sugar 2 teaspoons hot water 1 teaspoon Worcestershire sauce 1 tablespoon Soy Sauce.

04.01.2022 Recipe - Green Papay Salad ( som tam ) This is one of the best Green papaya salad recipes I had tried. Green papaya salad is a spicy salad made from shredded unripe papaya. INGREDIENTS... Serves 2 2-3 cloves of garlic Thai chillies, to taste 1.5 Tbsp small dried shrimp, roughly chop if you have large ones 5 long beans, cut in 2 pieces cup roasted peanuts Pickled black crab, optional 3/4 cup grape tomato halves 2 cups shredded green papaya Dressing 2 Tbsp palm sugar syrup * Juice of half of a juicy lime, about 2 Tbsp 1 Tbsp tamarind juice 1.5 Tbsp fish sauce 1 Tbsp Pla Ra (fermented fish paste), optional ** Recipe Notes: * To make palm sugar syrup, cook 1/2 cup finely chopped palm sugar with 3 Tbsp of water, stirring until all sugar is dissolved. Store leftovers in a sealed jar for future uses. ** If not using Pla Ra, increase fish sauce to 2 Tbsp. INSTRUCTIONS In a clay mortar, pound together garlic and chillies until there are no more big chunks. Add dried shrimp, and pound to crush them up a bit. Add long beans and peanuts, and pound to break them up. Add palm sugar syrup, fish sauce, lime juice, and Pla Ra, if using. Throw in the remainder of the lime after juicing as well for added flavour. Mix well with a large spoon. Add pickled crab, papaya and tomatoes. Mix everything together. Serve with Sticky Rice sticky rice is the best If you do not have a mortar & pestle, you can: Grate the garlic with a zester, finely mince chillies, chop the peanuts, and bruise the long beans with any pestle-like object you can find (a bottle? rolling pin?). Toss everything together in a bowl. Or if you have a small mortar and pestle, follow the recipe until the dressing ingredients are all added. Toss the content of the mortar with the crab, papaya and tomatoes in a larger bowl. The idea here is to mimic what the missing equipment wouldve accomplished!
