22.01.2022 HOW TO MAKE COCONUT KEFIR with Christine Ludke Naturopath This probiotic beverage is made by fermenting coconut milk with kefir grains. Consuming these active cultures restores balance to your microbiome, stimulates digestion and improves your immune system. Ingredients... 4 cups coconut milk (can be homemade or your favourite brand) 2 tbsp kefir grains 1 wooden spoon 1 cloth, coffee filter or paper towel 1 glass bottle with lid Method 1. Transfer the coconut milk to the glass bottle container. 2. Add the kefir grains and stir with the wooden spoon. 3. Cover the mixture with the cloth or other cover (listed above). 4. 21.01.2022 Giant Gluten Free Cookies * 170g(6oz) Butter or for replace with dairy-free spread and add an extra 30g (1oz) of flour * 60g Soft light brown sugar * 300g (10.5 oz) Gluten free flour * 1/2 Tsp bicarbonate of soda... * 1/2 Tsp salt * 1 Large or 2 small beaten eggs * 2 Tsp vanilla extract * 185g (6.5oz) Bittersweet or semisweet dairy-free chocolate chips or cranberries or nuts or saltanas * 40g milled linseed 1. Preheat the oven to 180C (350F, gas 4). 2. Line two baking sheets with baking paper. 3. Melt butter in a small saucepan. 4. Add in the sugar, stirring until no lumps remain. 5. Sift the flour, bicarbonate and salt into a mixing bowl. 6. Add the melted butter and sugar, the beaten egg, and vanilla extract and mix to a soft dough. 7. Mix in the dairy-free chocolate chips or cranberries or nuts or saltanas. 8. With wet hands, shape the dough into 18 or 24 balls. Placing well apart on the prepared baking sheets. 9. Bake for 20minutes or until golden and well spread but still slightly soft. Remove from the oven and leave to cool on the baking sheets for 10 minutes then transfer to a wire rack to cool completely. 10. Store in an airtight container to share. TIP: You can make the dough in advance, roll it into a log and freeze it, ready for cutting into cookies at a later date. Ted loves the cranberries mix, whats your favourite ?

A recent research review highlighted the following recent findings in the link between microbiomes and obesity: * Obese participants have a reduced bacteria richness and abundance in the gut, leading to gut dysbiosis and disturbances in metabolism. * Reduction in some gut bacteria increases systemic inflammation and insulin resistance. * Oral microbiome alterations can induce dysbiosis in the gut, leading to disruption of the intestinal barrier and systemic inflammation. * The oral and gut microbiomes modulate metabolic balance via a complex cross-talking, involving the immune system, which regulates metabolic functions. * As Body Mass Index (BMI) increases, the diversity in bacterial species in saliva and the sublingual plaque decreases. 11.01.2022 Lutein and zeaxanthin: Eye and vision benefits By Gary Heiting, OD Good nutrition is important to keep your eyes healthy and functioning their best throughout your lifetime. Two very important eye nutrients that may reduce your risk for macular degeneration and cataracts have names you may not be familiar with: lutein (LOO-teen) and zeaxanthin (zee-ah-ZAN-thin).... Lutein and zeaxanthin are two types of carotenoids (kuh-RAH-teh-noids), which are yellow to red pigments found widely in vegetables and other plants. Though lutein is considered a yellow pigment, in high concentrations it appears orange-red. Cooked spinach is one of the best natural food sources of lutein and zeaxanthin. In nature, lutein and zeaxanthin appear to absorb excess light energy to prevent damage to plants from too much sunlight, especially from high-energy light rays called blue light. In addition to being found in many green leafy plants and colorful fruits and vegetables, lutein and zeaxanthin are found in high concentrations in the macula of the human eye, giving the macula its yellowish color. In fact, the macula also is called the "macula lutea" (from the Latin macula, meaning "spot," and lutea, meaning "yellow"). Recent research has discovered a third carotenoid in the macula. Called meso-zeaxanthin, this pigment is not found in food sources and appears to be created in the retina from ingested lutein. Lutein and zeaxanthin appear to have important antioxidant functions in the body. Along with other natural antioxidants, including vitamin C, beta-carotene and vitamin E, these important pigments guard the body from damaging effects of free radicals, which are unstable molecules that can destroy cells and play a role in many diseases. In addition to important eye and vision benefits, lutein may help protect against atherosclerosis (buildup of fatty deposits in arteries), the disease that leads to most heart attacks. Eye Benefits Of Lutein And Zeaxanthin It is believed that lutein, zeaxanthin and meso-zeaxanthin in the macula block blue light from reaching the underlying structures in the retina, thereby reducing the risk of light-induced oxidative damage that could lead to macular degeneration (AMD). A number of studies have found that lutein and zeaxanthin either help prevent AMD or may slow progression of the disease.
