21.01.2022 New Red Raku Chawan by Shoraku kiln. Beautiful to hold and drink from. Smoother to the touch and lighter than our two other Black Raku from sensei Sasaki Shoraku’s kiln. A stunning piece worth treasuring for years to come.

20.01.2022 How to make Usucha at home, with a simple set-up. We pre-sifted 2g of Matcha into our Chawan to make whisking easier. 60ml of water. Gotta love that last lonely bubble left at the end!

20.01.2022 These new tea cups arrived yesterday, after a rough journey from Japan to Australia, via Singapore. Some of them didnt make it one piece (graphic images of broken tea wares have been spared), but the ones that did have already found their spot in the sun!

20.01.2022 Meet the latest addition to our teaware collection: Unglazed Yohen Kyusu, hand-built and hand-carved at Gyokko kiln in Tokoname. A piece of elegant design with unique colour variations created during firing. The changes of colour during firing are known as yohen in Japanese, which literally translates to "changed by the fire/flame". The floral pattern that decorates the lid has been hand-carved by the potter.... Fully handmade using natural unglazed black clay, which will slightly enrich the taste of the tea with its minerals minimizing bitter notes. Capacity: 210ml

16.01.2022 Gazing at some beautiful leaves before brewing them for the first time. This Tencha leaves are semi-finished material intended to be ground into Matcha, made from a blend of Samidori x Ujihikari cultivars.

16.01.2022 The short picking season of our higher grades of Matcha has practically come to an end in Uji. The processed Tencha will now be cold-stored for at least 5-6 months in order to develop a richer and more complex flavour prior to be ground. The waiting game is on and there are some exciting news that we look forward to sharing.

15.01.2022 Houjiki (also known as Hojiki, Houko or Houroku in Japanese) is a ceramic pan designed to roast fresh green tea into Hojicha at home (also coffee beans or sesame seeds) directly from a flame or stovetop. Simply heat up the pan, add fresh green tea and roast for your desired amount of time (usually a few minutes) making sure to keep rotating the vessel allowing the tea to move around for an even roast. When the tea reaches the right roast level it can be easily transferred into a teapot by tilting the Hoijiki up and letting the leaves run through the hollow handle. Made in Tokoname and available on our store.

15.01.2022 For some reason cold rainy days call for a bowl of Koicha. Maybe its the fading summer greeness all around us that wants to be reaffirmed. 4g of Matcha kneaded into a viscous paste that grips to the palate unlike any other tea, and a zen-like effect that pairs with the rain just fine.

15.01.2022 Cupping different teas next to each other is a great way to understand flavours and highlight the unique characteristics of each leaf. It can be done as a quick way to help us pick which tea we like the most from a new batch of samples, or as an exercise to train our senses and focus on the presence of certain flavours within each tea (floral, earthy, sweet, fruity, astringent, vegetal, nutty, roasted, spicy and so on). Its quite a fun task to do! Here we tasted 4 Japanese teas (from left to right): Sencha Okuhikari, Sencha Okumidori, White Leaf Sencha and Genmaicha + Matcha. The last 2 will be available on our store soon! . Swipe to see the tea flavour wheel, courtesy of @mei_leaf. @ Melbourne, Victoria, Australia

15.01.2022 Our Hohin teapots by Masako Kurokawa are finally back in stock. Handmade in Kyoto and available in 3 different glaze variations w/ matching Yunomi teacup.

14.01.2022 Youve probably had Genmaicha tea before, also known as peoples tea in Japan. But have you tried this tea finally ground into powder? Its still quite rare to find but its delicious when blended with milk into a latte or mixed into baked goods! We source it from a family-run tea estate in Mie and we couldnt be happier with its quality! The freshness of Sencha green tea combined with the comforting cereal notes of roasted brown rice make it a perfect winter warmer

14.01.2022 Todays featured vessel is this striking hand-built Hohin by Murata Yoshiki from Tokoname. Made of red clay and twice-fired (reduction firing) to create a double colouration, and meticulously hammered across the external surface to give the vessel a unique texture. One of our favourite piece of teaware! Great for brewing high-quality Gyokuro.

13.01.2022 The journey of our Hakuyoucha white leaf Sencha briefly captured in a few photosfrom the beautiful garden of our grower in Hoshino to our table. A delicious tea with a subtle corn-like sweetness and round Umami. Our current batch was harvested at the end of May so its very fresh!

07.01.2022 Shincha 2020 has arrived! Its our first year sourcing Shincha and we couldnt be happier with what were currently brewing. There are now 2 Shincha listed on our store: a 100% Saemidori Sencha from Chiran and a Fukamushi Saemidori x Tsuyuhikari blend from Kyushu. Both incredibly fresh and aromatic as a good early spring tea should be. They will be our daily drinkers for the next few weeks, along with the few more Shincha expected to arrive soon.

07.01.2022 A capture of a late afternoon infusion of our Hakuyoucha White Leaf Sencha. The tea was thick and viscous, with a rich vegetal aftertaste that lasted for 3 infusions. The spent leaves have a beautiful pale yellow hue, unique to this rare tea variety.

07.01.2022 We cant tolerate no more. #blacklivesmatter

06.01.2022 This humble handmade piece of art sold before our eyes, while still on a plane from Kyoto. Its our newest Kuro Raku Chawan from Shoraku Kiln, soon to be restocked. Compared to the one thats been in our collection for the last few years, this bowl is slightly shallower and more irregular, with subtle brushes of golden glaze here and there. A piece of teaware to treasure for many years!

06.01.2022 New Matcha bowl added to our collection. Meet MOKU - a relatively shallow but sturdy bowl with a thick rounded lip. @ Melbourne, Victoria, Australia

04.01.2022 Hakuyoucha White Leaf Sencha is a rare kind of Japanese tea produced in Hoshino Village, Yame - made from tea trees which have undergone a naturally occurring mutation that turned the colour of the leaves into a very pale shade of green. Cuttings of these mutated plants are then replanted into small fields of tea, after which at least 3 years are necessary for a field to be ready for harvest. The name white leaf refers to the pale colour of the leaves prior to harvest.... It brews a thick liquor with a mild, refreshing astringency complemented by a light sweetness and corn-like notes. There's also a pleasant mild Umami taste lingering in the mouth after drinking it. The physical effect of the tea is quite invigorating and energising, and we were lucky enough to secure a small batch of this rare tea, available now on our store.

04.01.2022 We have some new teaware items making their way to our online store in the next few days, just in time for Christmas. This unglazed angled Jinsui teapot has a simple and modern design, holds 330ml and it’s available in black and white clay.

03.01.2022 Sneak peek of what’s to come. From the fields of a living legend from Uji, we’re about to reveal 2 new single cultivar Matcha that never fail to delight us with their delicious complexity and charm. These 2 gardens grow some of the most delicious Uji Matcha we had the pleasure to taste: Asahi (1st photo) and Ujihikari, two breeds of tea trees with subtle differences, yet clearly notable particularly when prepared as Koicha. They’ve just landed and are impatiently resting in our freezer while our final packaging labels are being printed. Stay tuned

02.01.2022 There are a few new Japanese tea cups on our store! Heres one of them, sitting next to our (unfortunately out of production now) Kuro Hira Kyusu.

01.01.2022 One of our favourite vessels is now back in stock! Hand crafted Tokoname Hira Kyusu fired using reduction firing technique to turn red clay black, and partially covered with rice husks during firing to create a double colouration. Ideal for high-grade Gyokuro and other Japanese teas. Few pieces available. @ Melbourne, Victoria, Australia

01.01.2022 Close up of our new Hira Kyusu (flat Kyusu), hand-built and fired at Sekiryu kiln, Tokoname. Its intricate pattern is created using a technique known as Mogake, consisting in covering the teapot with seaweed prior to being fired, causing the minerals of the algae to react with the clay and imprinting a burnt pattern on its surface. A striking vessel, designed for brewing high-quality Japanese teas.... Holds 140ml. Only a few pieces available on our store. @ North Melbourne, Melbourne
