21.01.2022 Producer and roaster sitting side by side. The coffee industry is a stormy sea to navigate if ethics and sustainability are priorities. In the near future we will be having an open and public discussion about how zimmah chooses to navigate this industry, and we would love our community to be a part of this. Through transparency and relationship our world prospers. Muito obrigado @augustoborgesferreira @capadociacoffee_farm ... @burgeoncoffees @3brotherskoffee See more
19.01.2022 What a great few days spending some time with this legend! Matias from Cofinet works hard to ensure the amazing coffees make their way safely to us all the way from Colombia! We're very grateful to have partnered with Cofinet as it allows us to work with a company that not only delivers amazing quality coffees, but has positive outcomes for producers and their communities ... Watch this space for future events that will give our community the opportunity to learn more about the coffee industry!

16.01.2022 In response to COVID -19 and to help protect our staff, customers and community, from today until further notice: We will not be accepting reusable cups and lids We strongly recommend moving to contactless payments (cards, phones) to minimize the use of cash as much as possible. Our cafe seating will be adjusted to allow for greater space between patrons. We have intensified our current cleaning procedures to ensure we are providing a safer environment for all.... Please no handshakes, high fives, fist bumps, hugs, etc for our staff. If you're feeling unwell or displaying symptoms, please refrain from putting other customers or our staff at risk and stay at home. We understand that these changes may not be ideal for everyone, but we are in less than ideal times, and we are doing what we can to help prevention. Hopefully hindsight will prove us to be overzealous but we believe this is the best course of action. We hope you understand and help to support us through these times. Remember, it's still ok for you to come in and have a brew, and our online shop is operating if you'd prefer (or need) to drink coffee at home. We are keeping updated with the Australian Government Department of Health and other relevant organisations as well as leading coffee roasters and cafe's around the world. If you have any feedback or questions, we'd love to hear from you. [email protected]

14.01.2022 Zimmah in Brazil! Quick recap of the past 5 days Tim has spent in Brazil After a day of adjusting in Belo Horizonte, we traveled east to meet Pedro at Piñhal estate and spend some time seeing his 4 farms: Fazenda Piñhal, Fazenda Vertentes, Fazenda Antonio & Fazenda Mirante. Zimmah is currently using a naturally processed lot from Fazenda Vertentes in our Devil and the Deep and Son of a Gun blends. ... The experience I have had here over the past 4 days has been incredible. To be welcomed as family and shown all the amazing things Pedro does here has had a big impact on me. It is a truly humbling experience to bear witness to the work these amazing people do to provide us with their beautiful coffee. We truly are very lucky to have Pedro providing his coffee to us. There will be much more info to come, but for now, lease enjoy the photos, and if you have any questions, fire away below and I'll respond as WiFi allows.

09.01.2022 "Breaking the crust" Initial stage of a sensory analysis session involves an assessment of the aromatics of a coffee. This particular point in the video above is called "breaking the crust" and is when we use our calibrated senses to make an assessment of the aromatics present. We take into account intensity and quality when assessing aromatics. This motion of breaking the crust releases a big waft of aroma, and is a special moment - the coffee is starting to reveal itself
