Our priority is always the safety of our customers and our team. We are closely following NSW Health advice on managing COVID-19 in all areas of the business and have recently implemented all the measures required for Covid Safe business registration with the NSW government. We now ask you to sign in upon entry wh...ile visiting us for record keeping in an event of a need for contact tracing. In addition, we ask that if you feel unwell, kindly stay at home and we will deliver whatever is required to your door. Hand sanitising, socially distancing and cashless payment are also conditions of entry. For us to stick to the most rigorous safety protocol in our roasting environment, we needed to modify our retail hours as well, to ensure safety for our roasting process. 10.01.2022 Theres something I must share with you today.. This morning I was served at work filter coffee from our new Nicaragua Seasonal origin, that just landed in our roastery. And it was WOW ... I didnt see that coming... I like my filter coffee at room temperature so I let it chill for a while and when Ive sniffed it after few minutes, I couldnt get enough of the strong blueberry aroma, which made me think: theres no way that this aroma will carry itself through in the cup as a distinct taste (as the case with few Central American origins that burst with aroma yet present fairly thin body). Little was I prepared for what was about to hit me.. Explosion of fruit hitting my palate in all directions, a dash of underlining, intoxicating cocoa notes, but most prominently, a thick, candy-like sweetness that balanced out the fruit acidity so beautifully. This is a truly exceptional coffee from the El Pen micro-farm which has optimum soil and altitude for the Red Catuai varietal. The amazing taste comes from the cherries being hand-picked when very ripe then slowly and carefully dried at a low temperature. Of all the microlots, El Pen Natural is the most difficult and time consuming to process, but oh boy does it worth it! Its also a certified Rainforest Alliance coffee.
