The relationship first came about when Icebergs Dining Room and Bar invited Matt Whiley from @scoutldn to take part in an Icebergs Bar collaboration with World Class in 2018. Maurice and Matt fell in love and started working together shortly after, opening a Scout residency on the second floor of Sydney's Dolphin Hotel. After the residency finished Ma...urice and Matt insisted on continuing to work together so after a whirlwind year, they've teamed up to launch RE, a Regenerative Bar and Kitchen, which reflects the pair's shared values of sustainability, recycling, repurposing, and recreating.
