24.01.2022 We are delighted to announce............. We have a new HEAD CHEF / Restaurant Manager Meet Thomas Haering... Thomas originally was hired as the Restaurant Manager, but with our old head chef leaving us, and covid 19, 360 Gradi had to restructure and Thomas has temporarily taken over the kitchen. Classically trained as a chef in Switzerland Thomas has worked in some of the best places in Europe and was in charge of Petrus a 3 star Michelin Restaurant at the Island Shangri-La in Hong Kong. His love for local South Australian producers and wine, lead to Thomas being voted twice Chef of the Year in South Australia ( Gourmet Traveller Guide) and winning twice Best New Restaurant in South Australia. Under the motto Simplicity is the ultimate sophistication his cuisine is honest, authentic without the high end food fuss Thomas claims to be Swiss, but the once whom have meet him, will agree, he has all the trademarks of being Italian. On 23rd of March 2020 Covid 19 hit Australia and the Hospitality landscape changed forever! Refusing to lay down and to place all the blame on covid 19 we as a team decided to use this situation to bring in some huge changes. We moved away from importing italian wines and italian produces. We knew we had to support local small business like ours, because that was the only, we as a local business community.could survive these challenging times. We knew that South Australia has some of the best products in the world so, it was just a matter of sourcing the right ingredients and suppliers for our award winning pizzeria. But what few people knows is that this recipe of pizza takes the name of the Italian Queen Margherita of Savoy. Legend has it that the Italian unification recently concluded, in the last quarter of the nineteenth century, southern Italy was still offended from losing their independence. It was then that the king and queen were visit to Na...ples in order to harmonize the tension with the citizens of the south. During this trip, the queen asked for the best chef in Naples, tired of gourmet French food, which were the usual royal delicacies then. The sovereign asked the best pizzaiolo Raffaele Esposito to prepare three types of pizzas. It seems she fell in love with the tomato sauce, mozzarella and basil leaves.
