19.01.2022 A big thank you for a lovely night on Thursday and all the sweet cards and gifts. My pandora charms/earrings are my new fav piece! Thank you AmberCISERs that came to class after class. I enjoyed chatting, laughing, oh and working out with you all too! I am going to miss each and every one of you. There is no other fitness instructor out there I know, who can call ALL their attendees their good friend. Thanks for letting me be a part of your lives and your fitness journey.... I am so immensely proud of each of your progress over the year!! I saw fitness levels improve, toned up tris and thighs and even centimeters lost around waistlines. Keep up the great work!! I am sorry to leave you, but never fear.... I am still here on Facebook. Join me in my Stay fit for summer program! I will be posting up my workouts and healthy festive recipes that I create. Each arvo I will post up my next days workout that you can complete anywhere.. At your holiday house, your folks home or even the beach. All you need is a decent set of dumbbells and a mat. I will kick off the first day of Summer tomorrow with an early morning run. I am getting in early as its going to be a hot one and I have packing to get stuck into! So plan when you will fit in your run or walk for tomorrow to kick off your stay fit for summer challenge!!



19.01.2022 Hope you smashed out todays body weighted workout! Tomorrows workout is a run or walk. If you are stuck for pressie ideas this Christmas, here is a quick and creative Butter free choc banana brownie mix. For a smaller jar (as pictured):... 1st layer 1/2 cup of flour 2nd layer 1/3 cup of cocoa 3rd layer 1/2 cup of stevia or sugar 4th layer 1/2 cup of sugar 5th layer 1/2 cup of flour 5th layer your choice of choc of dried fruits, nuts or choc bits. Repeat the layers for a larger jar. The instructions for the brownies: Small jar: add 1 egg and 1 or more large mashed bananas Large jar: add 2 eggs and 2 or more large mashed bananas Bake in 180 degree oven for 30mins! These were part of my gifts I gave out to my AmberCISERs that won attendance awards. The brownies are so scrummy, I hope you enjoy making the jars up!

18.01.2022 Hope you all had a festive weekend and are getting pumped for Christmas! We kick off your Monday workout with a run, set aside some time tomorrow and make it happen!! I trialled out a super easy and fresh citrus salad over the weekend and thought Id share the recipe with you: Simply toss,... 2 oranges, that have been peeled and segmented 1 small thinly sliced Spanish onion 2 baby cos Shake up and drizzle, 1/4 cup of olive oil 2 tbsp of red wine vinegar 1 tsp of orange rind 1 crushed clove of garlic It makes a great side to any seafood or your left over turkey. We enjoyed ours with S&P squid!

18.01.2022 Tomorrows workout AmberCISERs is a run or walk to earn your credits for the weekend ahead! I challenged Shannon to create a dinner that was festive and fresh to share with you all. I think he nailed it with his take on a sung choi bao: Ingredients ... 1 tablespoon vegetable or peanut oil 500g turkey mince 1 garlic clove, crushed 2 teaspoons finely grated fresh ginger 1 x 230g can water chestnuts, drained, finely chopped 4 green shallots, ends trimmed, finely chopped 60ml (1/4 cup) oyster sauce 60ml (1/4 cup) soy sauce 100g bean sprouts Pinch of salt 12 iceberg lettuce leaves 10 mushrooms half a bunch of coriander, juice of 1 lime 1 tsp minced chilli 2 carrots grated Method Step 1 Heat the oil in a large frying pan over medium-high heat. Add the turkey mince. Cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until mince changes colour. Add the garlic and ginger and cook, stirring, for 1 minute or until fragrant. Step 2 Add the water chestnuts and green shallots and cook, stirring, for 1 minute or until combined. Stir in the oyster and soy sauces and cook, stirring, for 2 minutes or until well combined and heated through. Remove from heat. Add the bean sprouts and stir until just wilted. Taste and season with salt, if necessary (the soy sauce in this dish means its usually salty enough for children). Transfer to a serving bowl. Step 3 Place the lettuce leaves, cup-side up, on a serving platter and serve immediately with the mince mixture.

14.01.2022 I am hoping the wind dies down for tomorrow... As you guessed it! Its a run/walk workout for tomoz!! Another of my summer recipe idea: For a super easy way to jazz up a continental breaky during my old flying days, we would layer fresh fruit, Greek yoghurt and muesli in a glass!! The perfect nutritious summer breaky and for when your Christmas guests stay over!!

14.01.2022 1 week until Christmas! The week before Christmas can get pretty manic and its easy to put the exercise and nutritious eating by the wayside. Put aside some time tomorrow for a run/walk before the weekend kicks off! If you are keen to get your bake on for the festive family gathering, but are after a guilt free and fibre plus option, check out my banana, strawberry and coconut muffins. They can be made vegan too! Ingredients:... 2 1/2 cups flour 1/3 cup stevia or sugar 1 tablespoon baking powder 1/2 teaspoon salt 2 tbsp bran 1/2 cup of shredded coconut 2 bananas 1 cup nondairy milk or skim milk 1/4 cup light olive oil 1 teaspoon vanilla extract 1 1/2 cups strawberries, sliced Green food colouring Directions: 1) Preheat oven to 180 degree. Line a muffin tin with paper liners or patty cases. 2) In a large bowl, stir together the flour, sugar, baking powder, bran, 1/2 the coconut and salt. 3) Mash bananas and whisk together bananas, nondairy/milk, coconut oil, and vanilla. 4) Add wet ingredients to dry, and stir until combined. Stir in strawberry slices. Fill muffin cups with batter. 5) Mix remaining coconut with a few drops of green food colouring and then sprinkle on top of the muffins. 6) Bake for 20 to 25 minutes, until golden brown and testers inserted into the centers come out clean.

10.01.2022 Hope you squeezed in your body weighted workout and enjoyed it too! Mine was smashed out early this morning before driving Shan to his final exam and another day of packing too. The workout for tomorrow is a walk or run, so schedule it in for sometime tomorrow and stick to it:)... 2nd day of summer and we are tucking into our first mangoes for the season! Here is a better for you version of a tiramisu, with a summery twist! Layer the following: - Sponge fingers - Drizzle of rum or coffee liqueur - Greek yoghurt - mango - if you like top with coconut or a few choc shavings! Allow to soak and soften in the fridge. Enjoy! X

09.01.2022 Its that time of the year where you start to consider your New Years resolutions for the new year ahead. Whats your New Years resolution? If involves improving your fitness or getting trimmer, make an actual plan on how you will achieve your goal. Perhaps, aim to exercise 5 x a week or cutting back on portion sizes or alcohol. Planning makes the goal more realistic and obtainable than simply get fitter or lose weight. May you all enjoy yourselves tomorrow celebrating the beginning of a 2015!! Oh and before I forget, get in early tomorrow and smash out a run or walk to earn your champers credits to cheer in the new year!

01.01.2022 I know its Christmas Eve tomorrow and there is last minute grocery shopping and relos catch ups to do... Before the mayhem kicks in, smash out a run/walk! Thats my plan:) I also wanted to share with you a recipe I trailed from Pinterest. Oh and Id go half the chilli, unless you like it smokn hot!
