21.01.2022 Virgin Pina Colada Bringing in the new year with this little gem! Ingredients:... 150ml pineapple juice 50ml coconut milk 25ml lime juice ice cherry , to garnish For the mock rum syrup 100g dark brown muscovado sugar 1 pineapple , a few strips of skin, plus leaves to garnish 5 black peppercorns 5 cloves 1 cinnamon stick Method 1. To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days. 2. Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.

19.01.2022 Baked Spinach Mushroom Quesadillas!!! YUM YUM Check out this deliciously crispy quesadilla recipe, all you'll need is: 4 tortillas Olive oil (enough to lightly coat the tortillas)... sliced mushrooms (as many as you want) 1 cup shredded mozzarella 3 cups roughly chopped spinach Tip: beans, mince, avocado and onion are all great ingredients to add as well! Method: Preheat the oven to 200 degrees Celsius. Place the mushrooms in a microwave-safe bowl, and microwave for 2 1/2 to 3 minutes to soften them. Drain the mushrooms and set aside. Tip: You can even sauté the mushrooms in coconut oil instead. Lightly brush one side of each tortilla with the olive oil and place on a baking sheet, oiled side down. Distribute the mushrooms, spinach and mozzarella, evenly over half of each of the tortillas, and fold the other half over top. Bake the tortilla for about 6 minutes, then flip each over and bake for another 6-7 minutes, until the cheese is melted and the outside of the tortillas is brown. Next just take it out of the oven and get ready to enjoy!! Don't forget to comment and tell us how yours turned out.

16.01.2022 When you look forward to a sneaky delicious treat that is easy and tasty! Protein Rice Krispies Treats Recipe Prep time: 5 minutes... Freeze time: 30 minutes Ingredients: Coconut oil 4 cups brown rice crisps (or classic Rice Krispies) cup all-natural peanut butter (or other nut butter), partially melted cup brown rice syrup 3 scoops vanilla protein powder 1 teaspoon vanilla Preparation 1.Grease a 9-inch by 9-inch pan with coconut oil or line it with parchment paper. Set aside. 2.In a medium bowl, mix together melted peanut butter, brown rice syrup, protein powder and vanilla until it forms a dough consistency. 3.Add brown rice crisps to the peanut butter mixture. Use your hands to gently fold the rice crisps into the mixture. Then, pour mixture into the pan. 4.Using a spatula, spread mixture out evenly and press into pan so the bars are compact. 5.Place into freezer for at least 30 minutes, Before serving or storing, use a sharp knife to cut your treats into squares. Pro Tip Do not substitute honey or agave for brown rice syrup, since this sticky ingredient is essential to the recipe’s texture.

16.01.2022 Light and Easy Chicken Salad Calories: 191 Protein: 18 g Carbs: 13 g Fat: 8 g... Fiber: 2 g INGREDIENTS: -Chicken Breasts -Pecans -Grapes Green Onion -Mayo -Greek Yogurt -Mustard -Herbs & Spices INSTRUCTIONS: 1. Cook and Shred Your Chicken: Cook your chicken either roast, boil, grill or pan sear. Once your chicken is cooked, then shred it using forks or my stand mixer method mentioned above. 2. Make the Sauce: Most chicken salad sauces have a mayonnaise base. However, for this chicken salad I use greek yogurt, mustard, a small amount of mayonnaise, lemon juice, smoked paprika (for a smoky flavor), sage and garlic powder. This sauce is savory and tart but balances so well with the chicken and sweet grapes. 3. Add Extras: Most people add fruit, hardboiled eggs, celery, nuts or onions for a little added flavor. 4. Mix: Add your chicken, sauce and extra ingredients to one bowl. Use a large wooden spoon and stir everything together. ENJOY

Another colour-filled recipe These stuffed bell peppers are a sure winner on our deliciousness scale, and we have even found some alternative ingredients for those looking to add more protein into their diet or for those who simply want a vegan option All you'll need is: ... 1 pound lean ground beef OR chickpeas 4 mushrooms chopped 2 ribs of celery chopped thinly 1 medium onion chopped 2 cloves garlic minced 1 tomato 2 tablespoons concentrated tomato paste 2 tablespoons basil 1 tablespoon oregano 1 1/2 cups cooked black rice 1/4 cup chopped parsley 6 bell peppers optional ingredients: Corn Cheese Recipe: Preheat the oven to 350 degrees F. Brown the ground beef (or chickpeas) in a frying pan over medium high heat for 5 minutes or until cooked almost through. Add the mushrooms, corn kernals (if adding), chopped celery, onion and garlic and cook until vegetables are softened. Stir in the diced tomatoes, tomato paste, basil and oregano . Season with spices of your choice and cook for 15 minutes. Stir in cooked rice and chopped parsley and cook for another 5 minutes or until the rice is warmed through. Meanwhile, cut off the tops of the peppers and spoon out the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with salt and place in a microwave safe dish with 1/4 cup water. Cover with plastic wrap and microwave for 5 minutes or until they start to soften. Transfer to a baking dish and fill the peppers with the hot meat and rice mixture. (Optional: Sprinkle the tops with cheese) and bake for 20 minutes or until peppers are tender. Serve hot and get ready to enjoy!

12.01.2022 We've found this Perfect Purple smoothie bowl to make for that spring time breakfast Ingredients: Banana, 1 (frozen) Oats, 2 tbsp (soaked overnight in soymilk)... Pear, 1 (frozen) Soy Milk, 1/3 cup Black Currant Powder, 1 sachet Granola, a handful Method: Blend all the ingredients together in a blender and blitz to a thick smooth consistency. Scraping down the sides with a spatula if necessary. The final consistency should be thick, but pourable when you turn the blender upside down. If it’s too thick, add more milk to reach desired consistency FINALLY... Transfer into a bowl and sprinkle some granola and some frozen or fresh fruits of your choice. Enjoy!

07.01.2022 Who likes a good Salad! Grilled chicken with pumpkin and tomato salad Ingredients:... 1 1/2 tablespoons (30ml) salt reduced tamari or soy sauce (see Tip) 1 garlic clove 2cm piece ginger, peeled 1 small red chilli, de-seeded 2 teaspoons honey 2 tablespoons lime juice 1 tablespoon sesame oil 8 skinless chicken thigh fillets (approximately 900g), trimmed of fat 1 tablespoon olive oil 400g pumpkin, cut into 3cm cubes 1 punnet cherry tomatoes (250g), halved Olive oil spray 4 cups English spinach, washed 1 tablespoon balsamic vinegar Cracked black pepper, to season Method 1. Preheat oven to 180C (160C fan-forced). Combine tamari, garlic, ginger, chilli, honey, lime juice and sesame oil in a blender until smooth. Pour marinade over chicken and set aside for 20 minutes, turning once. 2. Drizzle oil over pumpkin and tomatoes in a small bowl and toss to coat. Transfer to a baking tray and bake in the oven for 25 minutes or until tender. 3. Lightly spray a grill pan with oil and heat. Remove chicken from marinade (reserve marinade) and sear in pan for 3 to 4 minutes on each side. Transfer to oven, pour marinade back over chicken and cook for an additional 10 minutes. 4. Remove vegetables from oven and toss through spinach. Sprinkle veggies with balsamic vinegar, season with pepper and serve with chicken.

04.01.2022 Egg Roll in a Bowl PREP: 10 mins | COOK: 15 mins | TOTAL: 25 mins SERVINGS: 4 servings, about 6 cups - 3 tablespoons low-sodium soy sauce divided... - 1 teaspoon cornstarch - 500 grams 90%-93% lean ground turkey - 225 grams cremini mushrooms - 3 cloves garlic - 1 small bunch spring onions divided - 1 tablespoon rice bran oil - 1 bag coleslaw - 1 cup grated carrots freshly grated - 1 tablespoon minced fresh ginger - 1 tablespoon rice vinegar - 2 teaspoons fresh chili paste (sambal oelek) or hot sauce of choice plus additional to taste - 2 teaspoons sesame oil - teaspoon ground black pepper For serving: brown rice, quinoa or cauliflower rice Instructions 1. In a medium mixing bowl, whisk together 1 tablespoon soy sauce and cornstarch with a fork. Add the turkey, breaking apart the meat and stirring to coat with the sauce. Let marinate 10 minutes. Meanwhile, chop the mushrooms very finely and mince the garlic. Thinly slice the green onions. If any of your other ingredients are not yet prepped, do it now. 2. Heat a wok or large, deep sauté pan over high heat. Add the rice bran oil and swirl to coat. Add the marinated turkey and cook, breaking apart the meat into small bits with a heatproof spatula, until it’s no longer pink and fully cooked through, about 5 minutes. Add the spring onions (reserve a small handful for serving) and mushrooms and cook until the mushrooms soften, about 2 additional minutes. Reduce the heat to medium low. Add the broccoli coleslaw, carrots, ginger, and garlic. Stir-fry for 2 minutes, until the vegetables are softened. 3. Add the rice vinegar, chili paste, sesame oil, black pepper, and remaining 2 tablespoons soy sauce, then stir to combine. Continue to cook for 1 additional minute. Taste and add additional soy sauce, hot sauce, or black pepper as desired. Scoop into serving bowls (over brown rice, quinoa, or cauliflower rice if desired). Fat: 9.5g Protein: 31.5g Ingredients: 16 wonton wrappers 8oz. ham steak 8 egg whites 16 tablespoons greek yogurt cream cheese 4oz. reduced fat shredded cheese Instructions: 1. Preheat oven to 350 degrees F. 2. Spray your muffin pan with non-stick spray. Line each cup with 2 wonton wrappers like pictured. 3. Fill each cup with 2 tablespoons of greek yogurt cream cheese, 1oz of ham, 1 egg white, and 1/2oz of shredded cheese. 4. Bake for 15-20 minutes or until eggs are fully set. 5. Let cool for a few minutes before lifting them out.

02.01.2022 YUMMY! looking for a delicious, healthy dessert? Well try these healthy raspberry oatmeal bars! Ingredients: 2 1/2 cup old-fashioned oats (use GF if needed)... 1 cup almond flour 1/2 cup honey (maple syrup for vegan) 2 tbsp creamy peanut butter 1/2 cup coconut oil melted 1 cup raspberry jam 1 pinch of salt Method: Preheat oven to 170 Celsius. In a food processor or high-powered blender, roughly chop oats until they are in smaller pieces. In a large mixing bowl add chopped oats & almond flour, coconut oil, honey, and peanut butter. Mix thoroughly and the mixture should be oily with a crumble-like texture. Line a baking pan with parchment paper. Set aside 1/2 cup of mixture for the crumble topping, and pour rest of oat mixture into baking pan. Make sure whole mixture is patted down evenly. Prick with fork to allow steam to come through the bottom of the pain (this prevents any unnecessary rising of the crust). Bake uncovered in oven for 10 minutes. Let crust cool for several minutes. Dollop jam around the top and spread evenly. Use extra oat mixture that was set aside to sprinkle as crumble on top. Bake in oven for 15-20 minutes, until edges of the crust are golden brown. Let bars cool for 10 minutes before cutting. Cut and serve! Don't forget to comment and tell us how you went!
