19.01.2022 One of the true legends of the Melbourne bar scene has passed away. Vernon Chalker, creator of The Gin Palace, one of the truly iconic bars of Melbourne. Madame Brussels too. He made the Gin Macchiato the standard knockoff for most of the citys bartenders. (3 shots of gin with a splash of tonic) My mate Jesse Brooke (The Negroni Project) and I went to an early Good Food Week event hosted by Vernon, based naturally enough on the Martini. He was at pains to point out that as ...this was a civilised festival event that we wouldnt be going too wild. Just explore the world of Gin with six standard Martinis then, plus the couple we had with him whilst waiting for the event to start. Pretty sure we made out with everyone in the venue that night or quite possibly just one of the pot plants or a luxurious chair, hard to tell. His venues have taught me a lot about hospitality, the people I met through them even more. He will remain one of people that gives Melbourne its vital beating heart. So raise a Martini to Vernon (made anyway you bloody like). A debonair ratbag of the highest order. See more
