03.01.2022 *** Are there differences in EVOO from different regions of Australia? ** Your Special Invitation to the Webinar ABOUT Project 0743 is an investigation into the feasibility of creating a designation of origin system resulting in greater co-operation and profitability of Australian olive oil farmers.... Extra virgin olive oil (EVOO) is the natural oily fruit juice that is extracted from fresh olives using a mechanical process without further processing. Consequently, every EVOO has a unique natural chemistry and taste profile, both of which can be directly attributed to the olive variety, where it is grown, and how the olives were processed into oil. European olive growers have successfully exploited this uniqueness in terms of higher profitability by emphasising regionality under the official Protected Designation of Origin (PDO) and Geographical Indications (PGI) systems. This project investigates the feasibility of implementing a similar designation of origin system in Australia via a case study involving collaboration between olive growers from the Fleurieu Peninsula of South Australia and South East Queensland. Further benefits of this study include heightened grower knowledge of the impact of regionality on the taste and healthfulness of their product and how this may be translated to influence consumer choice. Richard trained and headed Australias first International Olive Council accredited panel. He was the inaugural lecturer in sensory science at the University of Adelaide and later lectured in food and wine matching at the Le Cordon Bleu culinary school. He developed the current nationally recognised TAFE certificate level unit in olive oil assessment. He has authored a number of peer-reviewed papers on the communication value of terms used in the sensory assessment, on the consistency of expert tasters in judging situations, and on the bitterness and pungency in olive oils. Currently, he is a full-time research scientist working on taste active polyphenols.
