05.01.2022 LARD WRAPPED EYE FILLET A quick and easy recipe that will impress, thanks to the guys at Crackling Smallgoods who made a fantastic lard. Now, I'm very fond of lard, it's one of the finest smallgoods in the world and the one produces on the mountains surrounding Carrara, in Tuscany, is surely the best in the world.... But since right now it's a little bit difficult to go to Carrara to buy some lard, you can simply pop in at Crackling's shop on Liebig Street and get some, you won't regret it. Add some slices to a hot toasted slice of sourdough bread to go with your fried eggs for breakfast, or wrap it around a slice of Australian eye fillet cut thick, adding a couple of sage leaves between the lard and the fillet. Heat up a good skillet (I love the skillets made in Australia with wrought Iron by https://www.solidteknics.com ) with a dollop of tallow or lard, cook the fillet 3 minutes per side or to your liking, covering it for a minute or two if you are cooking it rare so the center can reach about 40-45 degrees and the lard can melt. Enjoy the fillet with a garden salad, mixed leaves with thinly sliced red onion, mixed little tomatoes, chopped celery, carrot and Lebanese cucumber and seasoned with extra virgin olive oil, salt and apple cider vinegar. Better enjoyed with a glass of Sangiovese red wine.
