24.01.2022 With the family visiting from Sydney, after a three months CVirus separation, it was time to pull out all the stops, so I made an ameretti biscuit base tart crust, with a layer of caramel, poached pears, and a pistachio cheesecake filling, topped with whipped cream, mixed berries and toasted pistachios. And for my special grandchildren, who I have really missed seeing, some chocolate baked donuts, with white chocolate mousse and sprinkles.

16.01.2022 A special lemon chiffon birthday cake with lemon curd and Italian meringue buttercream filling (IMB)in the top tier and raspberry jam and IMB filling in the bottom tier. Covered in white chocolate ganache and fondant and decorated to order for a much loved daughter.

06.01.2022 An eggless sponge for a friend. Looked pretty much the same as usual sponge, very light and moist. A bit of raspberry jam and fresh cream to add taste and colour.

05.01.2022 As it was my birthday, I made this cake for two special friends, Gay and Sue, who wanted to celebrate our limited freedom, as Canberra opens up a little, as well as my birthday. Knowing I seldom eat cake, Sue surprised me with a very clever and creative cake made using cheese, including my absolute favourite, Camembert. I am so impressed!

02.01.2022 I was asked by a very special lass in Malaysia to make a cake for her boyfriend living here in Canberra. COVID is keeping them separated and she wanted him to know she was thinking of him on his birthday. I had the happy job of delivering his surprise cake to him and see the pleasure and joy that her thoughtfulness gave him. I fell in love with the two of them and feel I have made two very special young friends. Always nice to have a good story to tell. Arul and I share the same birthdate and these two lovelies, later in the day, delivered to me a birthday gift. Very special people!
