22.01.2022 Perfect for the current weather in#perth #wa #stayhome #staysafe #mussels #napolitana #basil 1 brown onion diced finely ... 5 tomatoes skin peeled and diced 2 spoons tomato paste 100gm basil torn by hand(not chopped) 2 piece rough chop 2 cloves garlic thinly sliced 50 gms smoky paprika 50ml white wine 12 pcs mussels Method: 1. Sweat the onions and garlic on a slow gas(don’t brown it cook till soft) 2. Add tomato paste and cook for 2 minutes...add diced tomato and smoky paprika and cook further till tomatoes start giving out water(can add 200ml water and cook so when you blend it’s a finer paste) Blend the purée..lot reciepes say add sugar...the Italians don’t...got my ass whooped by a Nonna(Italian grand ma)for doing so 3. Take deep pan...sweat half an onion(fine diced)garlic 1 clove and chilli...cook till brown..add the white wine( you can add a bit the wine from ur glass that you would be drinking while u make it) Add Mussels on high heat for a minute and cover it,add the sexy Napolitana sauce you’ve made and cook till the shells open. Finish with the hand torn basil .. #pronto #chillimussels #ready
