What you'll need :... 100g (1/2 cup, firmly packed) brown sugar 80ml (1/3 cup) maple syrup 80ml (1/3 cup) Capilano Dark & Bold Honey 1 tablespoon dijon mustard 1 whole leg ham on the bone Whole cloves, to stud. .... The how to : Stir the sugar, maple syrup, honey and mustard in a bowl until the sugar dissolves. Preheat oven to 170C. Line a large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position. Remove all other shelves. Use a sharp knife to cut around the shank of the ham, about 10cm from the end. Run a knife under the rind around edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with cloves. Asian Marinated Grilled Skirt Steak ..... What you need..... .... MARINATED SKIRT STEAK: 1 kg Skirt Steak 1/2 cup soy sauce 1/4 cup rice wine vinegar 1 teaspoon sesame oil 2 tablespoons vegetable or canola oil 2 garlic cloves, minced 1/4 cup honey 2 tablespoons sriracha 2 tablespoons lime juice .... We served ours with a crispy healthy salad..... but heres the traditional addition for this tasty meal.... ...... CRISPY RICE: 2-3 cups cooked white rice 2 tablespoons vegetable oil ..... For the garnish: 2 teaspoon sesame seeds 1/3 cup chopped scallions METHOD : Make the marinade by combining soy, rice vinegar, sesame oil, vegetable oil, garlic, honey, sriracha and lime juice. Whisk to incorporate and dissolve the honey. Place the skirt steaks in a large sealable bag or non-reactive bowl. Add the marinade, and cover or seal the bag. Place into the fridge to marinade 1-3 hours. If using a bag, flip occasionally to make sure the meat is marinated evenly. ... While the meat is marinating, prepare the rice. ......IN a large skillet, heat the vegetable oil over medium heat for 1-2 minutes. Add the cooked rice in and spread to form a single layer. Lower the heat slightly and cook for 10 minutes until the bottom layer has turned a deep golden color. Remove from heat. Break up crispy rice to serve. Heat a grill for high heat grilling. Remove the steak from the marinade, and place over the hottest part of the grill. Flip every 3-4 minutes until the internal temperature reaches 135f. It should take about 10-13 minutes. Remove to a board, cover loosely with foil and allow steak to rest 5-7 minutes. Cut slices against the grain, then place over crispy rice and garnish with sesame seeds and scallions. 04.01.2022 If Christmas isn’t Christmas in your family without a Roast turkey, then here is a great recipe fit for a king ( or santa ). 2 tbs sea salt 1 tbs dried herbs 1 whole turkey 1/2 lemon... 1L Chicken Liquid Stock FOR GRAVY 1/3 cup plain flour 4 cups water ... How to : Begin 1-2 days ahead. Combine salt and herbs in a small bowl. Remove any excess fat from inside turkey cavity and place in a large non-reactive dish. Rub salt mixture all over turkey skin and inside cavity. Leave uncovered and place in the fridge for 24-48 hours to allow to brine. .. Preheat oven 250C (230C fan-forced). Remove turkey from fridge. Drain away any fluid from brine, but do not rinse the turkey. Prepare your stuffing, and then stuff cavity. Seal with lemon half. Draw legs together and truss with kitchen string. Place turkey on a rack inside a large baking dish and pour in stock. .. Place in the oven and immediately drop temperature to 190C (170C fan-forced). Cook for 2.5 to 5.5 hour basting every 45 minutes with the juices in the bottom of the pan. If skin is getting too brown, cover breast with a piece of aluminium foil.. Roast for approximately 30-35 minutes per kilo. I used a small size 44 bird (4.4kg) and the cooking time was just under 2.5 hours. To test if it is cooked, use a meat thermometer inserted deep into the thigh and breast. It will be cooked when it has reached 74C. Alternatively, press a sharp knife into the meat between the thigh and breast. The juices should run clear. Once cooked, remove turkey to a large plate and cover to rest. Spoon off any fat from the roasting pan, then place on the stove over high heat. Add flour and stir to combine with drippings. Allow to cook for 2-3 minutes. Gradually add water, half a cup at a time, stirring well. Simmer to thicken. Strain through a sieve to remove any lumps. Remove stuffing from turkey and place in a serving dish. return it to the oven to crisp up if you prefer.
