22.01.2022 We are beyond thrilled to announce that @damon_porter has joined us as Head Chef. Porter joins DALTON Catering following a 3-year tenure at chic Albion local, Vaquero Dining. Porters food revolutionised the Albion dining scene and will now do the same for Brisbanes catering and events. Having pursued a QLD centric career and trained under famed chef Dave Rayner and spent time at Urbane, Aquitaine Brasserie as well as a stint in Frances Cote dAzur further refining his skil...ls. Porter feels he is now ascending to the peak of his culinary prowess with a balance of classic technique and Australian ingenuity with world class ingredients. Damon Porter isfirmly rooted in QLD and its bounty, insists on procuring ingredients exclusively via small local artisans and is excited to be able to bring these to the people of Brisbane and their events. When asked what he is most looking forward to about his new role he says, I am looking forward to the excitement of events in our current climate and further developing the mark of quality that is associated with the DALTON Catering brand. I am finally able to realise my dream in taking artisan charcuterie and salumi to the people outside the confinements of a restaurant.
