24.01.2022 Here we are, what my clients Rohan and his lovely wife chose for their exclusive experience on Sunday was the Goodmorning Vietnam. So, the ingredients posted yesterday for you to guess were the essentials to make the authentic and tasteful bowl of #Pho Bo... We started off in the most traditional way by grilling the key ingredients (see yesterday post pic) on open flame. Cinnamon,ginger,shallots and star anise the adding them to the broth along with pepper and lemongrass. A bowl of Pho is magic, sweet and sour broth, silky noodles and fresh pungent herbs. 19.01.2022 Today a little help on how to cook dried legumes. Cooking dried legumes ... Presoak: to reduce the cooking time of legumes soak them in plenty of fresh water for 8 hours before cooking. This reduces the cooking time of 25% or more for a basic reason: if legumes are cooked directly from a dry state, much of the cooking time is actually spent waiting for water to get to the center. Meanwhile, the outer portions of the legumes cook more than they need to and may get fragile. Faster soaking way: blanch the dried legume for 1 1/2 minutes in boiling water then place in cool water for just two to three hours. Just enough water: The greater the volume of the cooking water, the more color, flavor, and nutrients are bleached out of the legume and the more they are diluted. Simmer: though boiling temperatures speed cooking, the turbulence of boiling water can damage the seed coats and cause the legume to disintegrate: lower temperatures are slower but gentler. Salt or no salt, this is the question: add salt (10gm/l) or baking soda (5gm/l) in the pre-soaking water, actually speed the cooking process. Of course, added salts affect taste and texture of the cooked beans and the alkalinity of baking soda can give and unpleasantly slippery mouthfeel and soapy taste. 16.01.2022 Totally #imprompturecipe, quick, easy and super delicious. Warm up a pot, add a good couple of tbsp of oil, add 1/2 sliced onion, a tsp of cumin seeds, a tsp of coriander powder, 2 tsp turmeric powder, small diced eggplant, a can of chickpeas (drained and rinsed), , 1/2 cup of tomato passata or diced tomatoes,1/2 cup of water, pinch of salt and few curry leaves. Cover with lid and cook for 15-20 minutes or until the eggplant is cooked. Add approx 150gr of grated tofu or hallo...umi, or feta . Cook for further 5 minutes and serve. Utterly delicious and warms our heart and soul. P.s the smaller the diced eggplant is the quicker it will cook Enjoy! See more

15.01.2022 Hello everyone, I hope you are safe and well today. Last night I decided I wanted something to warm my heart and soul, so I looked at what I had available (well, looked not so well after all )and I decided to go for a #vegetarian Green Curry, along with the omelet and rice, as per tradition. Now picture that:... I collect all the ingredients for the omlet ( eggs, water, and fish sauce), the long grain rice, with the addition of a couple of kaffir lime leaves was simmering away, and I gathered all ingredients to make the green curry paste (by the way, I made a big batch, set aside the one I would use and froze the rest into dedicated iceblock for the rainy days ) I started to fry the paste along with the onions, the smell was fantastic, my mouth was watering, I was already feeling much, much better BUT ... I suddenly realized I was out of coconut milk!!! And I really didn t want to go to the shop! Ok, no coconut milk,mmm, I ran to the freezer to check if I had some coconut pulp, and there it was, my dinner was saved! So here is how you make your own coconut milk and cream out of coconut pulp. Place shredded coconut pulp into a sieve over a bowl, gradually add hot water as well as squeezing and milkingthe coconut. Set aside the first thicker coconut milk. Pour hot water over the coconut pulp once again and continue to squeeze it. This will make slightly thinner coconut milk. And here you have it, freshly made coconut milk! P.s: if you don t have frozen coconut pulp, use the shredded packed one, it will make thinner milk, but hey better than nothing! P.p.s Don t waste all the leftover pulp but use it to make biscuits, cake, energy bars and so on P.p.p.s . It is super tasty and much much closer to the authentic green curry! A must-try if you ask me! I hope this tip is useful for someone. Bye for now! 11.01.2022 Ok, lets get started with the #imprompturecipes . Roberta asked a lill help with Kale. 1. Warm up a frying pan, a couple of tsp of oil, add garlic and washed, spin dried chopped kale(stalks removed) , good pinch of salt.Pop a lid on and cook for few minutes.... Delicious as is as side dish to complement meat, fish or other veggie. Alternatively scatter some feta or goat cheese over, mmmm delish. To add up, if you have any, roast some sweet potatoes and create a plate adding the kale , some black beans and goat cheese or feta! Variation: add a tap of paprika or chilli flakes to spice it up a little One more recipe with kale in the next post! Ill make a very versatile pesto with whatever I have in my fridge and pantry! Qui in Australia si usa molto e le propriet nutrizionali sono strabilianti, quindi se ne avete in casa o riuscite a reperirlo io lo cucino cos: Riscaldate una padella, aggiungete un po d olio, aglio e cavolo nero tagliato a pezzetti (gambo rimosso), aggiungete un pizzico di sale. Coprite con coperchio e cuocete per pochi minuti. Ottimo cos, o con l aggiunta di un po del nostro peperone crusco in polvere o del piccante. 10.01.2022 Homemade pasta has become broadly popular these days for many reasons, someone does it to entertain kids, someone else to challenge themselves, others to just kill the boredom. But what about our #coeliac or #glutenintollerant friends? We got you covered!... Here a recipe for a Gf Homemade pasta so you can enjoy it too! 300 gm rice flour 80gm potato starch 65gm rice starch 50gm quinoa or teff flour 7 gm xantham gum 6-7 eggs (add the 7th egg if the mixture is too dry) Good pinch of Saffron threads (optional). P.s. if the mixture is dry and too crumble even after the addition of the 7th egg add a little white wine or water until dough is formed. Prepare the dough by hand or in a stand mixer. Mix all ingredients until a soft dough is formed. Cover with a damp cloth and rest for 1/2hour. Proceed by making your favourite pasta shape. Enjoy! @massimociminelli

08.01.2022 Just out of the oven my famous #granola for you. I usually make it with any nuts available in my pantry and by adding a handful of this and a pinch of that so with no set amount of ingredients, true to the first commandment of Italian cooking, like nonna says we don t need a recipe!! So, by popular demand, today I took some time and weighted all ingredients and here you have it!... 1 cup of almonds 1 cup of cashew 1 cup of walnuts 3/4 of cup pepitas 2Tbsp of coconut oil 1 Tbsp of honey or rice malt 2Tbsp of chia seeds Pinch of salt (optional) Preheat the oven to 160C Line a baking tray with baking paper. Add almonds, walnuts, cashew, pepita and mix. Add coconut oil and honey, mix . Sprinkle chia seeds and salt. Bake in oven for 15 minutes or until golden brown. 06.01.2022 Hello! @lilljoy asked what to do with zucchini. So I thought to post this fresh zucchini dish.... The recipe comes from my own familyand its truly delicious, extremely simple and highly addictive! Thinly slice zucchini, dust with some flour and deep fry in oil. Meanwhile thinly slice garlic and thorn some mint leaves. Transfer zucchini onto a serving plate, add salt, garlic and mint and finish it off with few drops of vinegar. Enjoy as side, on bread or as is. Ciao amici italiani, probabilmente molti di voi riconosceranno questa ricetta, molto simile alle zucchine alla scapece con la differenza che io la spolvero con farina prima di friggerle. Affettate le zucchine sottilmente, spolverate con farina e friggente in abbondante olio. Nel frattempo, affettate uno spicchio d aglio e spezzettare qualche foglia di menta. Trasferite le zucchine in un piatto di portata, salate, aggiungete aglio e menta e qualche goccia d aceto. #buonappetito #imprompturecipe

04.01.2022 #imprompturecipes #Pesto with whatever you have available in you fridge , pantry and garden. Handful of baby spinach, kale, basil,any nuts( I mixed walnut and almond), approx 30 gr of Parmesan , small garlic , pinch of salt and extra virgin olive oil.... Blitz it all together as fine or as course as you like. Very versatile, you can use it as dip, or with pasta, in sandwich, as sauce you name it. If you are able to make a big batch freeze it in a ice cubs tray! Vegan friends substitute Parmesan with a couple of tbsp of savoury yeast. Use any greens available in your fridge, delicious with tender baby carrot leaves or rocket. *** Pesto di verdure miste, qualsiasi cosa abbiate in frigo o dalle coste belle piantine. Una manciata di basilico, foglie tenere di spinaci, cavolo nero, una manciata di noci o mandorle o pinoli, qualsiasi frutta secca abbiate disponibile andr bene, un pezzetto d aglio, pizzico di sale, parmigiano e olio extra vergine di oliva.Frullate il tutto decidendone la consistenza secondo il vostro gusto. Super versatile, da usare x condire pasta, da spalmare sul pane, come aggiunta a piatti di carne o pesce. Per gli amici vegani sostituire il parmigiano con il lievito alimentare. Delizioso anche con rucola o le foglie tenere di carote. 02.01.2022 A refreshing soup, tangy and light. From the Bedouin tradition, it contains ingredients that the Bedouins used to carry with them as legumes, grain, and flavoring. Traditionally, this soup will constitute the main meal in a Bedouin family but in restaurant and rich families is a refreshing appetizer to open everyone to the big meal! Enjoy! 2Tbsp extra virgin olive oil 150gm brown onion, sliced... 1 medium clove of garlic, chopped 150gm brown lentils 500ml vegetable stock 200ml water 150gm baby spinach 10gm coriander leaves 1/2 coriander root, finely chopped Juice of 2 lemons Good pinch of salt Freshly ground pepper For the taklia 25gm butter 1 small clove of garlic, crushed 1 tsp coriander, grounded Method 1. Preheat a medium saucepan, add the olive oil and sliced onion, cook on medium heat for about 5 minutes or until translucent. 2. Add garlic and lentils and stir for a minute. 3. Add stock and water and bring to the boil. Reduce the heat and simmer lentils for about 20 minutes or until just cooked. 4. Add lemon juice, spinach, coriander root and half of the leaves, a pinch of salt and freshly ground pepper. 5. Simmer for 5 minutes or until the spinach is just wilted. 6. For the taklia: melt butter in a small frypan, add crushed garlic and cook until golden. Add ground coriander and stir for half a minute. 7. Add taklia to the soup, stir well, pour onto a serving dish and garnish with remaining coriander leaves. 8. Serve hot or at room temperature #imprompturecipe #elementicookingschool

Yes in Italy is in March and of course, as per tradition I made some #zeppole to thank and cheer my wonderful husband, brilliant father, my own #papa and virtually every father! You need to make some #chouxpastry, the one to make #profiteroles, the video will show every step.... Would you like to make some? To make some zeppole use a number 15 star nozzle for your piping bag and make circles. Once cooked and cooled fill them with creme patissiere and top with sour cherry or jam.
