19.01.2022 Eschalot Alumni Such a wonderful catch up with two of Eschalot’s finest last week. Tony was Eschalot’s original creator, co-owner and head chef that secured this restaurant’s first chef hat. Eliza was maître d’ extraordinaire, resident artist (yes those gorgeous black and whites were hers) and a much loved member of the community.... Laughing hysterically and sharing stories of Eschalot past and present was such a wonderful, full circle experience for us all. 19.01.2022 My first year growing garlic and I must say it was a long 9 month wait... While they are a little smaller than hoped, we do have a crop of organic garlic to use in our new menu starting next week... well the first few weeks anyway Changing beds for next year’s plant out and making sure the soil is 100% before we start. Thank goodness I have 3 months to prepare!

15.01.2022 Just a shout out to all the other parents who are trying to run businesses and juggle their little ones. It’s bloody tough ... Some are lucky enough to have a tribe around them that can offer support. Some have no one. Some have found amazing employees that are family substitutes. Some just juggle. We like to mix the chaos up around here. Some days Odessa has me, some days she’s at daycare, some days she has a beautiful babysitter, some days (like this day) we just buckle her in, let Elsa work her magic and hope for the best. We are fortunate that on these days our staff are total legends and take turns entertaining the impulsive sass of an almost 3 year old. To all the parents out there trying their best with minimal help, we see you. If you need a ‘hospo weekend’ catch up with people who get you, hit us up! 02.01.2022 So... two years ago today we excitedly threw the doors to Eschalot wide open and let the world in as ‘the new owners’ (insert dramatic music because it was very dramatic for some). For those of you playing along at home, we all know what the beginning of Eschalot 2.0 was like... Not like the last one but not quite ‘us’ While we ironed out the creases we experienced the highest of highs and the lowest of lows. We have met some of the most delicious people imaginable in... this little village. They supported us on our first day, through our ‘testing’ period, through fires and now through COVID. We have made life long friends because of this restaurant and we are so grateful. By the same token, when we say low, go low, fall a little further in, roll around naked in the mud for a bit, be discovered by an opinionated passer-by who is more than happy to tell you all the reasons why you’ll never make it in such a tough industry and by the way, you have cape weed growing in your failing garden. So, on our second birthday, as we sip our thank-feck-we-made-it-this-far cocktails, we can confidently say we love our beautiful restaurant. Will it continue to evolve? Of course. But for now we can be happy in knowing this is finally the place we envisioned when we threw those doors open 2 years ago. Happy Birthday 2.0, we love you.
