19.01.2022 I love nothing better than sharing food with an appreciative diner. Yesterday we attended a community Xmas party and this salad was very well received and was gone in a flash! It is very easy, economical, healthy and yummy. Vietnamese Coleslaw Half wombok(chinese cabbage)finely sliced, ... 2 grated carrots, 4 sliced spring onions, one chopped red chilli, 8 leaves Vietnamese mint sliced, handful regular mint, handful chopped coriander. Combine all in a pretty see through bowl and refrigerate until ready to serve. For serving: handful chopped toasted almonds and store bought fried noodles. Dressing One quarter cup white vinegar, One quarter cup castor sugar, two teaspoons sesame oil, one tablespoon good soy sauce One half cup olive oil Dissolve sugar in vinegar ( I heat it slightly) add rest of ingredients and shake vigourously. Just before serving add chopped toasted almonds and fried noodles. . Easy, inexpensive, healthy and very yummy!
