20.01.2022 Who remembers the old Knickerbocker Glory days? Sunshine, sand, lapping waves and a tall sundae glass full of decadence and fresh fruit. In winter it’s good to be reminded of summer and what better way than to indulge in that quintessential taste of summertime ... KNICKERBOCKER GLORY Gelatine mix Fruit ... Tall sundae glass Ice cream Ice cream scooper Whipped cream Fresh cherry Fan wafer Sauce Nuts Make the gelatine flavour of your choice. After it sets in the refrigerator, take it out and break it into small pieces. Pick any type of fruit you enjoy. Bananas, peaches, strawberries, raspberries, grapes, peaches, grapes, melons, mangoes or even fruit cocktail can be used to make a Knickerbocker. Wash, clean and cut the fruit into bite-size pieces. Choose your ice cream - vanilla and strawberry ice cream and combinations of both are popular choices for the Knickerbocker Glory. Put a layer of varied fruit, nuts and gelatine on the bottom of the tall sundae glass. Put a scoop of ice cream on top of the layer and drizzle chocolate or strawberry sauce over it. Repeat the process for the height of the sundae glass. If you're using two or more different flavours of ice cream, alternate the scoops. Add whipped cream when you've reached the top of the sundae glass. Sprinkle on chopped peanuts, walnuts or almonds. Decorate your Knickerbocker Glory with a fresh cherry and fan wafer on top. Add more sauce on top if you wish. See more

Typically, the group we served on Sunday seemed to represent the best of that generation - still lively, interested and interesting. And, not the least, undemanding from a caterer's point of view! A bouquet for all the octogenarians who read this.
