14.01.2022 Everyone loves fresh, in season summer mangoes and sweets right?! You can't go wrong with this super simple Mango Chia Pudding recipe! Perfect for both adults and kids and easy enough to do in a holiday house, camping kitchen or of course in the comfort of your own home. All ingredients are available from Fresco, call in and pick them up this weekend, we are open from 8am. Ingredients 1 cup full-fat coconut milk 3 tbsp chia seeds 2 cups chopped mango... 2 tbsp pure maple syrup toasted unsweetened coconut flakes Directions In a jar, mix coconut milk, chia seeds, and 1 tablespoon of honey. Cover and refrigerate for an hour. In a blender, combine mango and 1 tablespoon of honey and blend until smooth. Layer chia pudding and pureed mango evenly among 4 small glasses. Garnish with coconut flake (if using) and serve.

13.01.2022 Don’t these little mango & fig tarts by Careme Pastry look divine? For this recipe, you can try other seasonal fruit such as fresh figs or baked peaches topped with roasted flaked almonds. Why not give it a go this weekend? We have everything you need in-store at Fresco to recreate these beauties! Serves: 6 Ingredients 375g Carême All Butter Puff Pastry 150ml milk... tsp vanilla extract 2 egg yolks 30g caster sugar 10g plain flour sifted 1 egg whisked for egg-wash 1 Mango 3 Figs Pure maple syrup to serve Mascarpone and fresh mint to serve Method 1. Preheat oven to 200C. 2. Bring milk and vanilla to the boil. Mix together egg yolks and sugar, then sifted flour, and then add the hot milk to egg yolks (mixing the whole time). 3. Transfer the mixture to a clean saucepan on medium heat, whisking constantly. Bring it to boiling then remove from heat and pour into a clean bowl, covering the surface with cling wrap to prevent a skin forming. Leave to cool. 4. Unroll sheet of pastry and cut 6 x 12 cm rounds, place on a tray lined with baking paper. Using a 10 cm cutter as a guide place in the centre of the pastry disk and gently depress to mark a border, then use a fork to prick the inner circle, followed by a tablespoon of custard. Brush border with egg-wash. Chill for 10 minutes. 5. Bake in an oven 10 mins at 200C then reduce the temperature to 160C and bake until pastry is golden brown. 6. Allow to cool for at least 5 mins then top with skinned and sliced mango cheek or quarter figs. Finish with a dollop of mascarpone and a drizzle of pure maple syrup, scatter with some sliced fresh mint.

03.01.2022 This lentil, beetroot and goat’s cheese salad is a perfect light salad to enjoy over the weekend, it’s quick to prepare and tastes delicious. Win-win! Full recipe as below: Ingredients 175g small beetroot, trimmed, washed 2 tbsp olive oil 1 shallot, finely chopped... 1 garlic clove, finely chopped 100g French lentils, rinsed 1 fresh thyme sprig Small handful flat leaf parsley, chopped 1 ripe pear 100g Meredith goats' cheese 2 small handfuls of rocket 4 walnut halves, roughly chopped Dressing 1 tbsp sherry vinegar 2 tbsp olive oil 1 tbsp walnut oil Method: 1. Preheat oven to 190C. Place beetroot on a baking tray & roast for up to an hour, depending on size. It is ready when it is tender to the point of a knife. When cool enough to handle, peel off skin & cut into wedges. Set aside. 2. Heat oil in a pan & sear shallot & garlic over medium heat until softened. Add lentils, 300ml water, thyme, tsp salt & plenty of black pepper. Simmer for 23 minutes, adding more water if necessary, making sure it is all absorbed. Leave to cool, then add parsley. 3. Core & slice the pear, leaving skin on. Preheat the grill. Slice the cheese and grill on one side. 4. Combine olive oil, walnut oil & vinegar for the dressing. 5. Place the lentils in a wide dish & top with rocket leaves. Nestle beetroot wedges & pear slices among leaves and top with grilled goats’ cheese and dressing. Sprinkle walnuts on top.
