23.01.2022 Being frugal to me doesn't mean being stingy with money it's about being clever with ingredients to do what many assume is impossible on a more reasonable budget. For example last night I made a delicious lamb shanks, white wine and pearl barley dish that used the shank from the father's day roast (I removed and froze) and 2 small shanks from aldi for $10. With some basic pantry items I've made a delicious dinner that will serve us dinner twice and maybe a leftovers lunch o...r 2. That's 6 meals for easily under $20, no need to cook for a night, all veg included just some fresh greens. With life so busy who has time to be cooking complicated meals that use heaps of ingredients? I'm frugal with my cooking but not on quality or flavour. I'm frugal with my time, if the oven is on, I often cook something else as well. Maybe muffins or a banana bread with those too ripe bananas in the fruit bowl. May as well make the most of the power bill too and lunches are sorted for the week! #frugalfood #frugalliving #finebutfrugal
18.01.2022 Chicken- why pay $12 kg for breast? We buy chicken eg steggles or ingham for $3.95 kg, chop into 2x Maryland + 2 wings perfect for all kinds of dishes enough for 2 plus leftovers and 2 x breast fillets. That makes us at least 6 meals for about $6 a chicken. Now that's frugal!
12.01.2022 Lamb... too expensive right? Well if you shop around there are bargains to be found. One of our local butcher's recently had 2kg loin chops (Cape Grimm) for $35 so if you're prepared to buy in bulk this was a great deal. I only serve 2 per person so that made about 8 meals for 2! Last night's dish- my famous "Chutney Chops" with duo mash & veg!... Make marinade of 3 tabs fruit chutney 2 tabs soy sauce, 2 tabs vinegar 1-2 brown sugar, mix and taste. It should have a balance of sweet sour and savoury, sprinkle in some Indian curry powder, marinate for half hour. Bake at about 200 until well cooked and a bit charred on the tips. Serve with veggies.
10.01.2022 Tonight's mid week marvel. Stuffed Chicken breast with ricotta and spinach leaves, served with medley of roasted veg. Made enough for lunches x2. Yummy! Cut a pocket in the breast add in mixed up ricotta, philly, parmesan and chopped baby spinach leaves, bake until cooked through rest for 5 minutes. Easy peasy!
01.01.2022 French inspired dinner party with friends. Amuse Bouche: Cream of celery soup (signature start) Entree: vintage cheese souffle (to redeem my self esteem as last ones didn't rise well) Main slow braised duck with tea soaked prunes and lentils served with baguette. Dessert: panna cotta with vanilla and a mulberry compote. ... Total cost $50 + wine to serve for 4 people. See more
