Share your version of this delicious meal in the comments or by hash tagging #hospoforlife ... _________________________________________________ Serves: 6 Cooking Time: 10 mins prep + 11 mins cooking 8 kaffir lime leaves 2 sides of trout or salmon, pin-boned 3 limes 4 ripe figs, thickly sliced 1 tablespoon soft brown sugar 1 cup roughly chopped mint 1 cup roughly chopped flat-leaf parsley cup toasted pine nuts Sea salt Freshly cracked black pepper Extra lime wedges Butcher's string 1. Cut four lengths of butcher's string, making sure they are long enough to tie around the fish, and line them up, evenly spaced. Position a lime leaf in the centre of each piece of string, then place one fish fillet on top, skin side down, then squeeze the juice of 1 lime over the flesh. 2. Place slices of fig along the fillet, dust with brown sugar and squeeze on some more lime juice. Sprinkle over the chopped herbs, followed by the pine nuts, and season with salt and pepper. 3. Place the remaining fillet on top of the seasoned fish and tie the string firmly. Slip the remaining lime leaves under the string, and season well with salt and pepper. 4. Prepare your barbecue or grill over a mediumhigh heat. Cook the fish for 68 minutes, then turn and cook for a further 56 minutes. 5. Allow to rest and serve with lime wedges. Show us your version of Simon's dish by tagging #hospoforlife... _________________________________________________ , , Serves: 4 Cooking Time: 8 mins prep + 12 mins cooking 480g peeled raw prawns 500g strozzapreti pasta 1 long red chilli, thinly sliced 30g garlic, thinly sliced 10g parsley leaves 10g mint leaves 10g dill leaves 10g chives 80ml lemon juice 160ml lemon olive oil 250g cherry tomatoes, cut in half Sea salt and cracked black pepper to taste 1. Cut the peeled prawns into chunky pieces, 3 pieces per prawn. Peel and slice the garlic into thin discs. Cut the chilli lengthways and de-seed, then cut into thin strips. Pick the herbs from their stems and mix all together, set aside for later. 2. Cook the strozzapreti pasta in a large saucepan of salted boiling water according to the packet instructions. Meanwhile, heat up 80 ml of olive oil in a large frying pan, add sliced garlic and chilli, as garlic begins to colour add the prawn pieces in and sauté for 1-2 minutes until they change colour. Then add the cherry tomatoes and toss everything in the pan. 1. Add the cooked stozzapreti pasta and a little bit of the pasta water into the frying pan, toss gently. Add lemon juice and the rest of the lemon olive oil, season with sea salt and cracked black pepper. Add half of the mix herbs in and toss gently. 2. Heat a frypan over moderate temperature and add in the oil. Fry the slices of pumpkin for 2-3 minutes on each side sprinkling them with a little cinnamon and cook until golden, set aside on the plate. 2. Layer the cooked sliced pumpkin into a platter, top with the shredded cooked chicken, walnut pieces, the spinach and rocket and crumble in the goats cheese. For the vinaigrette, smash 50g of the raspberries into a bowl and add in the olive oil vinegar, vinegar and the maple syrup, season with salt and pepper and stir. 3. Ada Daher's Baklava is great for a delicious treat after work or to share with friends at the weekend. ________________________________________ ... 2 cups plain flour, plus extra for kneading 5 tsp olive oil tsp salt 2 tsp white vinegar cup warm water Melted unsalted butter for brushing pastry with 1. Place flour in a deep bowl and make a well in the centre. 2. Add salt, oil, vinegar and water and knead into a dough. 3. Place aside for 30 mins while preparing filling. 1 cup corn flour 2 tbsp plain flour 1. Combine ingredients and dust dough with it when rolling. 500g pistachio nuts 500g walnuts cup icing sugar 1 tbsp cinnamon 7 tbsp rosewater 1. Use food processor to coarsely crush the nuts. 2. Combine nuts and all other ingredients in a bowl for pastry filling. 2 cups sugar 1 cup water Squeeze of lemon 2 tbsp rosewater 1. In a deep saucepan, place all ingredients together. Bring to the boil for 10-15mins until sugar has dissolved and syrup has thickened. Set aside to cool. 1. Roll dough into golf ball sized portions. 2. Roll each portion into thin rounds. You must sprinkle the starch mixture over your rolling pin each time you roll out one ball. 1. Brush the bottom of a 12 inch round baking pan with unsalted butter. 2. Place a layer of filo pastry then brush with butter and top with nut mixture. Repeat this process with the remainder of the pastry and nut mixture, leaving the top 2 layers of pastry sheets to show. 3. With a sharp knife, carefully cut the filo into diamond shapes. 4. Place the baklava into the oven at 220C for 5 minutes. Reduce heat to 180C and bake for 20 minutes or until golden brown. 5. After removing from the oven, immediately pour the cooled sugar syrup all over the baklava and set aside to let absorb. 6. Serves: 6 Cooking Time: 10 mins prep + 12 mins cooking (+ potatoes) 24 large (or 36 medium) sized green king prawns, cleaned and butterflied cup green Sicilian olives, stoned 340g jar roasted red pepper strips, drained 200g punnet grape or cherry tomatoes 1 bunch baby asparagus 1 tablespoon capers, rinsed and drained 1 tablespoon fresh oregano leaves 2 medium lemons, skins cut into shreds salt flakes and fresh pepper Extra virgin olive oil Small basil leaves, to serve 1. Pre-heat oven to 220C (200C fan-forced). 2. Cut 12 20x30cm pieces of baking paper. Lay six pieces over the bench, top each with a second piece. 3. Divide prawns between each and top evenly with olives, red pepper, tomatoes, asparagus, capers, oregano, lemon shreds, salt and pepper and drizzle with olive oil. 4. Bring the long sides of each piece up and fold firmly down. Then fold in the 2 short sides and tuck them under tightly to create a pocket. Repeat to make five more parcels. 5. Place parcels seam side on oven tray. Bake until just cooked through (10-12 minutes). 6. Remove straight onto serving plates, carefully open the top of each parcel and scatter with a few basil leaves. Serve with steamed potatoes, if desired : Replace the prawns with zucchini and red capsicum strips. Serves: 4 Cooking Time: 20 mins prep + 5 mins cooking 8 wooden skewers, soaked 1 mango cut into cubes pineapple, peeled, sliced into 2cm-thick wedges 125g strawberries, hulled, halved 1 peach, cut into wedges 1 plum cup brown sugar 10g ginger powder 1 lime juiced 20ml thick mint sauce or balsamic vinegar 3/4 cup granulated sugar 1/4 cup water 1/2 cup heavy cream 2 tbsp white miso 1. Soak wooden skewers in water for 20 mins. 2. Over a medium-high heat, stir together sugar and water. Bring mixture to a boil. When sugar becomes a deep golden brown remove pan from heat. 3. Once off the heat, carefully pour in the cream. Stir to combine. If the caramel seizes up and hardens with the addition of the cold cream, then put the pan back over low heat and stir until the caramel is liquid again. Whisk in the miso. Allow to cool slightly before pouring into a lidded container. Store in the refrigerator. 4. Preheat barbecue plate on medium-high heat. 5. Mix brown sugar, ginger, lime, mint sauce or vinegar together set aside. 1. Thread fruit onto skewers. Brush skewers with brown sugar vinegar mixture. 2. Barbecue skewers for 3 to 4 minutes or until warmed through. Brushing brown sugar mix on skewers regularly. 3. Heat a large pan, add oil, add sliced chicken thighs, season with salt & add half the semi dried tomatoes. 2. Cook everything on medium heat for 5 to 10 minutes stirring a couple of times until the chicken is completely cooked. 3. Remove the chicken and sundried tomatoes from the pan leaving the oil in. 4.
