25.01.2022 One of the best things about winter is getting toasty and making hot chocolates. We are all about at I Am Foods - and that means not using processed powders with added artificial sweeteners. Not only is a hot chocolate super tasty and even decadent - it is packed full of antioxidants, minerals and good fats. And, as if this isnt enough it is also a mood booster - it helps stimulate the brain into releasing neurotransmitters, which can in turn release... feel-good hormones. This is how we do it 5 Buttons Of I Am In The Now Cacao Butter 1-2 Tbsp I Am In The Now Cacao Powder (depending on how rich you like it) 2 Tbsp I Am Real Rapadura Sugar Or I Am Conscious Coconut Sugar 1 Tsp Vanilla Extract 2 Cups Coconut Milk (or milk of your choice) Add any of the following to make it a little more special: Vanilla, Cinnamon, Cayenne Pepper, Chili, Pinch of Celtic Sea Salt or Himalayan Pink Salt *Serves 2 1. Place all ingredients into a saucepan or Thermomix and heat to 60C stirring continuously until smooth - be mindful not to overheat as milk may curdle. 2. Taste and adjust the sweetness/flavour to your liking. 3. Pour and garnish with cinnamon stick & a sprinkle of cacao powder or favourite spice. 4. Serve, enjoy and be in the now with your hot cacao!

Spook them with these! 60g I am Awesome Almonds, ground... cup I am Conscious Coconut Flour cup I am Real Rapadura Sugar 1 tsp Vanilla Extract A pinch of Celtic/Himalayan Salt cup I am Conscious Coconut Flour cup I am Awesome Almond Milk 1 Banana, sliced Spooky toppings (we used raw chocolate to create the spider web effect) 1. Pre-heat oven to 180 degrees C. 2. Put all ingredients into a food processor and combine until even. 3. Shape into small balls and press between the palms of your hands to flatten. 4. Place on baking tray and bake for 15 mins or until starting to slightly turn golden. 5. Allow to cool, and decorate with spooky toppings! Get your Halloween bake on and trick them with a healthy treat!

22.01.2022 Munching on some heart healthy Hazelnuts got me thinking of this Notella recipe that we made for our French Food Safari! This is healthy, raw, vegan and better than Nutella! A great topping for pancakes and crepes, filling for cakes and truffles, as a spread on toast topped with bananas and cacao nibs, or just eat straight from the jar! ... 220g Hazelnuts 30g I am conscious Coconut Oil 160g I am conscious Coconut Nectar 100g Agave 1 tsp Vanilla 2 Tbsp I am in the now Cacao Powder 30-50ml Plant Milk of choice (more milk for a more liquid consistency) Roast hazelnuts in oven for approx. 10 minutes at 180 degrees (keep an eye on as you want them to be warm to release oils but not burn). Use a tea-towel to remove skins. Place hazelnuts into food processor and blend on high speed into a fine powder. Turn to a medium speed to form a dough, scraping down the sides of food processor occasionally (this can take about 3 minutes). Add coconut oil, nectar, agave, vanilla and cacao powder to form a paste. Place 1/3 cup of the paste in the processor and slowly add the milk while blending at a high speed to form a spread or drizzle. It will keep a week in the fridge and thicken slightly. A sure way to get 2021 off to a great start. 1 cup Raw Almonds 1 1/2 cups Coconut Pulp (leftover from making coconut milk, can sub almond pulp or other nut pulp) 1 cup (130 grams) of pitted Medjool dates 1/3 cup Cacao Powder 3 tablespoons Coconut Oil, melted at room temp 1 tablespoon Reishi powder, Maca powder or other adaptogen of your choice 1 teaspoon Vanilla Extract 1/2 teaspoon Celtic Sea Salt or Pink Himalayan Salt Toppings: Goji Berries, Crushed Nuts, Rose Petals, Salt Flakes, Dark Chocolate, Cacao Powder, Cacao Nibs, Coconut Snow or Chips, dust of Strawberry Powder 1. Pulse almonds in high speed blender on medium speed to chop them roughly, and then add the rest of the ingredients. 2. Pulse blender to bring mixture together (you might need to use a tamper) and then blend on high, mixing well with the tamper as you blend, briefly until combined. 3. 21.01.2022 Since we are going cray cray for coconuts at the moment, heres a recipe for a warm, comforting coconutty drink that serves as a wonderful morning coffee alternative - or any time of the day when you need a vital boost. (serves 1) 1.5 cups coconut milk 1 tbsp coconut butter (can sub cashew butter)... 1 tbsp coconut oil 1 tsp dandelion root blend 1 tsp I Am Foods 1 tsp ground cinnamon 1-2 tsp coconut sugar, or sweetener of choice 1 tsp vanilla Heat the coconut milk on the stove Add all remaining ingredients to a blender and carefully pour the heated coconut milk over the ingredients Blend until smooth and creamy. Alternatively, heat coconut milk in thermomix. Mix the remaining ingredients together and temper with some warm water before adding to the thermomix and blending until smooth and creamy. To serve, top with hemp seeds, coconut chips or edible flowers (like in this lovely pic). You can also add a spoonful to your morning smoothie, or your porridge and overnight oats for extra protein. For this recipe, we teamed Mesquite Powder with Coconut Flour for this unique take on the Lamington! ... Makes 8-10 cup I am Conscious Coconut Flour 2 Tbsp (40g) I am Complete Mesquite Powder teaspoon Baking Powder teaspoon fine Sea Salt 4 large eggs (room temperature) cup (40g) I am Amazing Agave Nectar (or alternative liquid sweetener) cup melted I am Conscious Coconut Oil 2 Tbsp Milk of choice 2 tsp Vanilla Extract Coating: 100g I am in the now Cacao butter 50g I am Conscious Coconut oil 40g I am Amazing Agave Nectar 2 Tbsp Matcha Powder I am Conscious Coconut Snow to coat Preheat oven to 180C Line 6 large muffin cups with paper or silicone liners; or 12 patty pan cups and grease with coconut oil (to prevent sticking). In a large bowl, whisk the flour, baking powder and salt until blended. Whisk in the eggs, agave nectar, oil, milk, and vanilla until completely blended and smooth. Divide the batter equally among the prepared muffin/patty cups. Bake in preheated oven for 17 to 22 minutes or until golden and a toothpick inserted in the center comes out clean. Transfer baking tin to wire rack and cool 10 minutes before removing. Coating: Place Cacao Butter and Coconut Oil in small bowl over a saucepan of boiling water and heat very gently until melted. Stir in Matcha and Agave, allow to cool slightly and thicken. Coat cakes in Matcha mixture and roll in Coconut Snow allow to set fully before transferring to airtight container. Keeps for 3-5 days.

17.01.2022 Happy Halloween Pumpkins How about this Creepy Corn & Quinoa Salad for those afraid to eat their greens?! As we fall into summer here at the west coast, this also makes an incredible summer salad or signature party dish.... CREEPY CORN QUINOA SALAD What you need 1 cup I am Confident Quinoa - White cup I am Confident Quinoa - Red Butternut pumpkin, roasted, diced finely 2 x Corn cobs, roasted, kernels only, 1 x Red capsicum, diced finely 1 x Yellow capsicum, diced finely -1 Red onion, diced finely 1 x Zucchini, diced finely Optional: Zucchini flower for decoration or stuffed zucchini flowers for extra pizzazz! For the orange dressing: 1 x Orange, juice only 2 tbsp apple cider vinegar cup Olive oil 1tsp Dijon mustard Celtic Sea Salt / Himalayan Salt Freshly ground pepper For topping: 80g I am awesome Almonds, lightly toasted 60g pepitas, lightly toasted What you need to do 1. Rinse Quinoa thoroughly, rubbing between hands for a quicker cooking time. 2. Place quinoa in 2 cups of salted boiling water, and cook for 10 minutes or until the quinoa ‘splits’. Drain and allow to cool. 3. Assemble diced vegetables together, lightly tossing through dressing and quinoa. Top with seeds and almonds. 4. Top with toasted or activated pepita seeds and almonds. 5. Optional decoration with zucchini flowers 6. Don’t be scared to enjoy!

Youll need: 100g Sunflower Seeds 100g Pumpkin Seeds 100g Dried Figs 200g Dried Pears Lemon zest 1 Tbsp 120g Sesame Seeds, ground (black and/or white) or I Am Conscious Coconut Snow Place sunflower and pumpkin seeds into a food processor and chop on a high speed (Thermomix 20 sec/speed 8) until it becomes fine ground meal (it should resemble almond meal in texture). Place figs, pears, lemon and spirulina and chop to combine on a medium high speed, you will see a dough forming, it should take 30 - 40 seconds to get a lump free texture ( Thermomix 30 sec/ speed 8). Roll into balls 2-3cm in diameter according to preference. Use a bag to coat the balls (in small batches) in coatings such as ground sesame seeds or coconut snow. Will keep for up to 7 days in an airtight container in the fridge.

Tips for making mylk: invest in a nut mylk bag (we recommend and stock the bags from @livingsynergy) go with a 1:2 ratio for a creamy consistency (good for desserts and chia pudding).For every 1 cup of coconut chips, add 2 cups of filtered water. when it comes to smoothies, mylk for pouring over muesli, granola etc you may prefer to use a 1:4 ratio; For every 1 cup of nuts/seeds, add 4 cups of filtered water. You can make coconut milk and cream from either desiccated coconut, coconut shreds or coconut chips. Or even fresher - from the flesh of mature coconuts. Avoid coconut products that are preserved with sulphites (preservative 220) as not only is this not good for you, but you also wont achieve a creamy milk as the sulphites dry out the coconut. ... Heres the recipe: 1 Cup I Am Conscious Coconut Snow/Chips 2 Cups Of Filtered Water *Add More Water For A Lighter Consistency Or Less Water For A Creamy Texture Optional additions 2-4 pitted dates (or sweetener of choice) 1/4 tsp vanilla extract (or other extract/food grade essential oil) 1/4 tsp Himalayan rock salt or Celtic sea salt Squeeze of lemon juice Colour with superfood freeze dried powders. 1. Caramel sauce: 2 cups pitted dates, soaked for 2 hours 4 Tbsp nut butter (cashew, almond) pinch Sea Salt 1 tsp Vanilla Superfood toppings of our choice! Shredded Coconut, Pepitas, chopped toasted Almonds, drizzled Raw Chocolate. 1. Blend all caramel sauce ingredients until you form a smooth caramel. 2. Cut the apple in half, attach to a skewer and coat in the caramel. 3. Add your favourite superfood toppings & freeze at least an hour to help firm the caramel. The caramel makes a great dipping sauce or filling for other recipes.
