24.01.2022 I've been experimenting lately with some different Christmas flavours; my favourite so far is Apple, Cinnamon and Ginger - what is your favourite Christmas flavour? To get you started thought I'd share a Spiced Christmas Kombucha, courtesy of 'To Her Core' SPICED CHRISTMAS KOMBUCHA... INGREDIENTS 500ml freshly made Kombucha 1 cinnamon quill 5 cloves 3 cardamom pods 3 Tbsp fresh orange juice tsp orange rind 2 thin slices ginger INSTRUCTIONS 1. Add the spices, ginger, orange rind and juice, plus the freshly brewed kombucha, to a 750ml jar, and stir to combine. 2. Place the lid on and seal, and then leave 1 - 5 days on the counter-top out of direct sunlight. Taste the kombucha after a day or two to see if it tastes good to you - if you would like a more developed taste leave a few days longer. 3. Once the kombucha tastes ready, strain the spices and rind, and add the liquid to a clean glass jar. Place in the fridge to chill, and then enjoy. Let us know if you like it.

23.01.2022 WHAT KIND OF BOTTLES SHOULD YOU USE? When choosing bottles, the most important thing is to ensure that they are air tight. There are a variety of bottles that will provide an airtight fit, so it’s best to just decide what will best suit your lifestyle!... Do you want to drink your kombucha on the run? Would you like to take it with to work, school, or running errands? Then I’d recommend using smaller bottles so it’s easier to travel with. If you tend to drink your Kombucha more at home, you may want to consider using larger flip top or screw top bottles, or even mason jars with air-tight plastic lids. Metal lids tend to rust and don’t provide an air-tight seal (unless submerged in boiling water). Mason jars are a great option for finishing your Kombucha, because you have a wide-mouth which allows for the addition of chunkier pieces of fruit for flavouring. If you enjoy a variety of flavours, you can make smaller individual sized mason jar glasses, perfect for you can grab the flavour of the moment, without having to decant.

Workshops include a 1.5 hour hands on session teaching you how to make and flavour your own tasty homemade Kombucha. All participants leave with a starter pack and guide booklet, so you can go home and start your own batch immediately. Ongoing backup and support is available

14.01.2022 What is F1,F2, F3 What is the difference between the fermentation processes? F1 is first fermentation .... You brew a sweet tea and add this to your SCOBY/starter and then wait until it reaches that tangy Kombucha taste. F2 is second fermentation. Once the Kombucha is done, you reserve enough SCOBY/starter for the next batch and you bottle the Raw Kombucha. You can add fruit/ juice/ flavours in F2 . F3 is third fermentation. Some people like to do F2 in a large jar/ jar with a wider mouth and once the flavours have infused, strain out the fruit and then bottle, for F3. Carbonising your Kombucha, if needed, can be done in either F2 or F3 if you are straining your liquid.

08.01.2022 KOMBUCHA RED WINE VINEGAR INGREDIENTS: 750 mL bottle red wine 1/4 cup kombucha... 1/8 cup filtered water INSTRUCTIONS: Combine all the ingredients in a canning jar or equivalent, Stir well and place cloth/ tea towel over the top and secure with a rubber band. Label with a start date and store in a dark place, Leave the mixture in a dark place undisturbed for 2 weeks and up to 3 months to let the flavours develop. Taste periodically with a clean spoon starting at week two to check a acidity levels. After your maturing period, transfer vinegar to smaller bottles for your kitchen use or share the love with friends and family. Continue to store in a cool place for 68 months. Recipe Notes Use red wine vinegar in salad dressings, as a delicious flavour boost to soups, and as a marinade for meat. Infuse your vinegar with herbs such as thyme or oregano to add a boost of flavour.

Then I’d recommend using smaller bottles so they're easier to travel with. Small 250ml/ 500ml flip top bottles are great for Kombucha on-the-go because you can be sure the lid won’t twist off. If you’re more of a home Kombucha drinker? You might consider using mason jars with air-tight plastic lids. Mason jars are great because they have a wide-mouth, so you can add your favourite flavours strainght in and have a variety to choose from. Alternatively you can store your Kombucha in larger flip top bottles and decant you favourite brew whenever you need to. How do you drink your Kombucha?

02.01.2022 WHAT IS KOMBUCHA VINEGAR? Anyone who has had a batch of Kombucha ferment for a bit too long has experienced what some people call Kombucha Vinegar. A longer fermentation of Kombucha tea produces a very acidic taste, a lot like Apple Cider Vinegar. Because of this property, Kombucha can be used not only as a slightly tart and sweet bubbly beverage, but also as vinegar as well. It is acidic like vinegar, and if used raw, it has beneficial probiotics and enzymes similar to Appl...e Cider Vinegar. Use your Kombucha Vinegar as a substitute in salad dressings, marinades, or any recipe that calls for vinegar. Happy experimenting.

02.01.2022 MOULD In my experience, the risk of getting mould in your Kombucha brew is very small indeed, as long as you work clean and remember to keep your brew away from things like your fruit bowl. If you wish to drastically reduce the risk then my suggestion would be, simply increase/ double the amount of starter you use for each batch. It’s that simple - by increasing the starter at the beginning of your brew cycle, you increase the acidity of the initial brew and mould just won’t ...go there. Another bonus achieved by increasing the amount of starter is a faster brewing batch, which is sometimes helpful during the colder winter months. Attached are some photos for reference. 01.01.2022 WHY BOTTLE YOUR KOMBUCHA? Bottling your Kombucha serves two purposes: - First, it provides easy storage to neatly place your favourite brew in the fridge or if you're on the move and want to drink your Kombucha/ share some with friends it's a spill proof option. Second, bottling provides an airtight environment where carbonation can build up. Carbonation adds so much to the finished product in terms of brightness, texture, and flavour.... The fermentation process will continue in the bottle, even with a tight lid, but it will be considerably slower than in the first fermentation.
