08.01.2022 Ok! Here’s a great recipe for the weekend Smoked Beef Shank Ragout with Pappardelle pasta Serves 4... Ingredients 1 beef shank 700ml of Passata or crushed tomatoes 1C red wine 2 onions diced 3 carrots peeled and diced 2 cloves garlic 2Tbl tomato paste 1 sprig rosemary 1 bay leaf 2tsp mixed herbs 1 lt water 1 sprig parsley Salt Pepper Pappardelle Pasta 300g plain flour 3 eggs Pinch salt Method 1. Place the beef shank into your smoker for 2hrs (this step is optional if you don’t have a smoker sear your beef shank in a fry pan until golden brown) 2. Preheat oven to 150C 3. Sautée onion, garlic and carrot in a large oven proof pot (approx 3min.) 4. Add red wine to the pot and simmer for 1 min. 5. Add the beef shank, passata, water, rosemary, bay leaf and mixed herbs to the pot and bring to the boil. 6. Place lid on pot and place in the oven for 6hrs or until meat is falling away from the bone. 7. Remove the beef shank from the liquid and place place in a bowl, remove the bone and pull the meat apart into small pieces, place aside. 8. Strain the braising liquid through a fine sieve into a saucepan and place over a medium heat, simmer until reduced into a thick sauce approx 30min. 9. Return beef to sauce and stir through freshly chopped parsley and season with salt and pepper. 10. Serve with fresh pappardelle pasta. Pappardelle Pasta method 1. Place flour and salt into a large bowl and stir to make a well. 2. Crack eggs into the flour and stir until combined. 3. Use you hands to work the dough into a ball, add 1tsp of water if too dry. 4. Knead dough on a surface dusted with flour for 5 min or until a smooth ball is formed (should not be too sticky or too dry) 5. Rest dough in a bowl on your bench for min 30min. 6. Roll out pasta dough into thin sheets using a pasta machine. 7. Cut fresh pasta sheets into approx 1.5cm wide strips for pappardelle. 8. Blanch pasta is boiling water for 2min and strain. 9. Serve with desired sauce.
