"When you can get down to a mechanistic understanding of what microbes, microbial products, and targets on the patient side are involved, not only are you doing great science, but it also opens up the opportunity for finding a better therapeutic and a better diagnostic approach to disease. With food allergies, this has given us a credible therapeutic that we can now take forward for ...patient care," said Bry. The team tested to see if orally administering protective microbes to mice could prevent the development of food allergies. They developed two consortia of bacteria that were protective. Two separate consortia of five or six species of bacteria derived from the human gut that belong to species within the Clostridiales or the Bacteroidetes could suppress food allergies in the mouse model, fully protecting the mice and keeping them resistant to egg allergy. Giving other species of bacteria did not provide protection. "It's very complicated to look at all of the microbes in the gut and make sense of what they may be doing in food allergy, but by using computational approaches, we were able to narrow in on a specific group of microbes that are associated with a protective effect," said co-first author Georg Gerber, MD, PhD, MPH, co-director of the Massachusetts Host-Microbiome Center and chief of the Division of Computational Pathology in the Department of Pathology at the Brigham. 14.01.2022 Around 17 years ago when first studying all the food additives, preservatives and processing aids in food science product development class) I remember being horrified that a large proportion of these original chemical numbers had limited scientific safety data and that safe usage was based solely on their previous historical usage in foods. Basically they made a food additives list in the 60’s and designated numbers to the chemicals already used and after this only the new ...additives and preservatives needed scientific safety trials to allow them to be used (but the ones that were already in use without trial just automatically stayed on the list (!!) So basically we are relying solely on the fact that we have been putting these things in foods for a while now so it can stay in use as opposed to adequate scientific data and statistics to support it’s safe usage in foods without negative side effects when consumed. I think this new study area which seeks to adequately research the effects of these chemicals on our intestinal microbiota is going to be very interesting in light of the new research on the negative gut impacts of artificial sweeteners.

Increasingly I’ve been away from my first passion (my kitchen) keeping very busy in my second passion (the nutrition and chiropractic clinic). Helping people get on top of their gut health by providing common sense real whole food based dietary plans that are personally tailored to individual bodies, individual guts with recipes and meal ideas... this is what makes my heart sing. Baking delicious but healthy treats for ...my two babes (miss 3 and master 6) for an upcoming school holiday camping trip makes me so happy. Its been a long time between baking sessions and it’s important to balance out everyday foods with the occasional special treat sometimes foods to teach kids about dietary balance. These healthy muffins are not only delicious but are grain free, dairy free, refined sugar free, high in protein and are also loaded with fibre and polyphenols from the raw cacao, raspberries and almond skins. Loaded up with grated zucchini they’re also a great way of sneaking in extra hidden veg for fussy eaters.
