23.01.2022 I have been on an adventure today connecting with people, coaching all my beautiful cleansers and enjoying some down time at the beach its been a beautiful Tues...day!!! Sometimes you just want a quick easy delicious meal and with under 300 calories and 30 mins to whip up this is the perfect option :) Like and share if you agree x Pumpkin, Fetta and Green Bean Salad Ingredients: 800g Kent pumpkin, cut into thin wedges, seeded 2 red onions, cut into thin wedges 2 teaspoons ground coriander 1/2 teaspoon dried red chilli flakes 1 teaspoon coconut oil 250g green round beans, trimmed 400g can chickpeas, rinsed, drained (1/4 cup) pepitas, lightly toasted 100g baby rocket leaves 75g marinated feta, drained, crumbled Balsamic vinegar, to drizzle Directions: 1.Preheat oven to 200C. Line a large baking tray with non-stick baking paper. Place the pumpkin and onion, in a single layer, on the prepared tray. Sprinkle with the coriander and chilli. Coat with coconut oil and season with pepper and salt. Roast for 25 minutes or until tender and golden. 2.Meanwhile, cook the green beans in a saucepan of boiling water for 2 minutes or until bright green and tender crisp. Rinse under cold running water. Drain. 3.Gently combine pumpkin, onion, green beans, chickpeas, pepitas and rocket in a large bowl. Divide among serving plates. Sprinkle with feta and drizzle over vinegar.
