20.01.2022 Rocky Road Christmas Pudding | A slice of #christmasinjulywithsunbeam What you will need: 1/2 cup SUNBEAM Sultanas 1/2 cup SUNBEAM Walnuts... 1 cup SUNBEAM Almonds 1 cup SUNBEAM Macadamias 1 cup ANGAS PARK Dried Figs 1/2 cup ANGAS PARK Dried Blueberries 1 Block of Dark chocolate 250ml Thickened Cream 100g White Chocolate Icing Sugar to Dust - Method Melt dark chocolate block and cream in saucepan over low heat and stir until combined & smooth. Take off heat. Roughly chop Sunbeam nuts, dried fruit and mix in large bowl. Add chocolate mix and combine all ingredients. Pour into baking paper lined dolly varden tin, to form pudding base. Refrigerate to set Once set remove from tin & discard paper. Melt white chocolate, when runny pour over set pudding to form custard pour. 18.01.2022 A fresh salad to kick off Spring. Try our delicious Roasted beetroot salad, made with Sunbeam hazelnuts and Sunbeam pepitas!! Recipe ... Roasted Beetroot Salad Preparation time: 25 minutes Cooking time: 1 hour Serves: 4 4 medium sized beetroot cup SUNBEAM Hazelnuts, roughly chopped 1 tbsp SUNBEAM Pepitas 1 tsp picked thyme leaves 1 tbsp olive oil 3 tsp white wine vinegar tsp sugar salad leaves, for serving 60g blue cheese, sliced 1. Pre-heat oven to 200C (180C fan-forced). Wrap each beetroot in foil, place on a tray and bake for approx. 45min-1hour until tender. When cool enough to handle, remove skin from each. Slice into cm thick rounds. 2. Meanwhile, place hazelnuts onto an oven tray and bake for 4 minutes, add pepitas and thyme and cook a further 4-5 minutes until golden and toasted. Allow to cool. 3. Whisk together the oil, vinegar and sugar, season well. 4. Arrange salad greens, sliced beetroot and cheese onto serving platter. What you'll need: - 1 tbsp Olive Oil ... - 3 Large Beetroots - 1 Segmented Orange - 2 Cups Rocket - 1/4 Sunbeam Pepita Seeds - 1/4 Sunbeam toasted Pine Nuts - 1 Red Onion - 3 Sliced Shallots - 2 tbsp Maple Balsamic vinaigrette - 30g Chevre ------------------------- METHOD: - Par boil the beetroot until they start to soften; Approx 30 min - Lightly coat the beets in a sweet thick balsamic vinegar with olive oil, salt & pepper. - Roast for Approx 40 min. - Once caramelised on the outside and tender on the inside, remove from the oven and leave to cool. - Assemble all the ingredients in serving bowl as above. #christmasinjulywithsunbeam #christmasinjuly See more

CRUST 1/2 Cup SUNBEAM Almond Meal 3 TBSP Coconut Oil 2 TBSP Brown Sugar 600ml Thickened Cream 6 Egg Yolks 1/3 Cup Caster Sugar 1 TSP Vanilla Bean Paste 1/4 Cup Pure Icing Sugar 2 TBSP SUNBEAM Slivered Almonds METHOD - Combine crust ingredients in a small bowl and portion evenly into ramekin base. - Whisk eggs/sugar/vanilla in heatproof bowl. Whisk in cream gradually. - On a simmering saucepan place heat proof bowl and stir over heat for Approx 10min until thickens. - Pour into ramekins, put ramekins in baking tray bath water level halfway up. - Bake till set approx 60 min on 160C. - Set in fridge overnight. - To serve sprinkle thin layer of sugar over brûlée and use blow torch to caramelise. - Sprinkle with Sunbeam Slithered Almonds that have been lightly toasted.

Base: 1 Cup Self Raising Flour 1 Cup Brown Sugar (lightly packed) 1/2 Cup Coconut 1/2 Cup SUNBEAM Almonds 1/4 Cup SUNBEAM Walnuts 125g Butter Caramel: 440g Condensed Milk 2 tbsp Golden Syrup 30g Butter Chocolate Icing: 125g Dark Chocolate (chopped) 125g Cream -------------------------------------- Method Sift flour into bowl + sugar & coconut stir till combined Melt butter in pan, add dry ingredients, mixed well Press into greased 28cm x 18cm tin Bake in moderate oven 10 min, then remove Spread with prepared caramel Return to oven for further 10 min, then remove When cold, spread with chocolate topping Cut into squares when set Caramel Stir all ingredients in saucepan over low heat until caramel has thickened, bring to boil, remove from heat Chocolate Icing Heat chocolate and cream in saucepan over low heat.
