18.01.2022 CHEESE OF THE WEEK Comte Symphonie is matured 1100 metres in the underground Fort of Saint Antoine. Only a few wheels are selected for extra maturation, up to 20 months. They are branded under the special label ‘Symphonie’ and are selected because of the development of intense flavour and supple texture which is in perfect balance. This delicious cheese is the staff favourite and it is becoming increasingly hard to get so when we have it, it’s a big show

04.01.2022 CHEESE OF THE WEEK Silky, dreamy, gooey goodness is the only way to describe Le Dauphin. A stalwart staff favourite. The unique hexagon shape is fantastic on a grazing board and makes for a gorgeous wedge when cut. We love this luscious, cows milk double brie paired with some guava paste. Some of our cheese lovers buy these by the wheel so hurry if you want to try!
