19.01.2022 For Day 5 of KOs Meri Month of May I am sharing a paspaliara Greek polenta pie. This version originates from Thessalia, Greece. It is my mothers recipe and ...its one of her favourite dishes too. It has a generous base of fine polenta and a delicious filling of spinach, spring onions, dill, sweet trahana, feta and eggs. It is then sprinkled with a layer of polenta on top. The pies name, paspaliara, comes from the Greek word paspalizo () which means to sprinkle! Make it now and sprinkle a little baking magic in your life! I am going to add some how-to snippets to stories, so you can see how easy it is to make! And did I mention it is crazy yum!!! 15.01.2022 Meet Eleni, the delightful face behind the deliciously gorgeous food blog, My familys food diary. We have loved following Elenis journey. She has taken us on ...a wonderful culinary journey while exploring and celebrating the cuisine of her Cypriot roots. During our Celebrate Baklava month, Eleni created these mouth-watering Baklava Scrolls and today she has been kind enough to share the recipe from her blog with us. Elenis creative interpretation of her favourite recipes always amazes us, and we love the connection that her recipes have to tradition, her family and her heritage. In her own words, here is a bit about Eleni and her recipe: From very young, growing up in Cyprus, I remember being in the kitchen with my late mum, my late grandmother and my aunties. I was very curious to learn and be involved in any way I could. My mum was one of 15 siblings and 9 of them were sisters who would always compare notes, share recipes and cook up a storm. Coming to Australia during my teenage years my dad and stepmum did a great job at helping us maintain our connection to our Cypriot roots. Cooking traditional dishes was and still is an important way to keep that connection. Just as important are the memories that it provokes when tasting a particular dish. I cook for my immediate family every day which I enjoy, especially when my two daughters want to watch me and help me cook. They pull out the step ladder, put on their aprons and take turns pouring ingredients or mixing. I absolutely love hosting dinners at our house for our family and friends. Once I plan my dishes, I get in the zone and I find cooking very therapeutic. I had so much fun putting together the Baklava Scrolls. I had called my stepmum to ask her about her recipe and in typical fashion there wasnt one exactly written out. She told me what ingredients she usually adds and described roughly how to assemble them. She usually makes hers not as tall but as I was folding the Fillo Pastry I liked the tall shape and wanted to find a way to hold the scroll in place, so I thought of baking them in a muffin tray. 07.01.2022 Getting some more help from my beautiful friends for this weeks dessert focus for the Meri Month of May. Today I am sharing Kellys Kalitsounia! Kalitsounia ar...e Cretan cheese pies served with honey! When we visited Crete 2 years ago, I had them for the first time and I loved them. I enjoy the combination of a savoury pie with a hint of sweetness. In Crete, kalitsounia are filled with myzithra; a soft, white, ricotta-like cheese. Unfortunately this type of myzithra is not available in Australia, but you can substitute it with ricotta. These warm, oozy, cheese pies are then drizzled with Cretan thyme-scented honey. Yum!!! The creation that makes you famous amongst your friends and family, the dish that people expect to eat when theyre invited over to ...your house for dinner, the one that youre repeatedly asked the recipe for? Today, our very own Christine shares her signature dish, which, as the granddaughter of our founders, naturally involves Fillo Pastry. Christines Chicken Spanakopita is a wonderful nutritious celebration of all things delicious! Chicken tenderloins, fresh leafy spinach, leek, creamy fetta cheese, chilli, pine nuts and the very important addition of one of our grandfathers favourite flavours freshly ground coriander seeds. While this pie can be made in any vessel, Christine makes hers in a springform cake tin which gives the pie an impressive height and allows the Fillo Pastry to cook to a golden crisp. An important tip when preparing this pie is to ensure you add a layer of scrunched Fillo Pastry before adding the filling to your pie and then again on top of your filling. This will help absorb any moisture that the filling releases during the cooking process. Its a wonderful dish, perfect for a midweek family dinner, packed with wholesome goodness! 02.01.2022 5 TIPS FOR PERFECT HUMMUS 1. Soak dried chickpeas overnight instead of using tinned for a nuttier flavour and creaminess. 2. Add a touch of baking soda to th...e soaking water to raise the pH level and soften the chickpeas. 3. Add a few ice cubes to the blender when pureeing for a freshly churned ice cream texture. 4. Use a good quality runny tahini (avoid the stodgy ones). I love @alkanaterlb you can find it in the Middle Eastern section of some supermarkets. 5. Elevate your presentation with vibrant garnishes - za,atar, sumac, parsley, pomegranate and chickpeas are some of my favs. My hummus recipe is a few posts back if youd like to give it a go.
