23.01.2022 Well Done Sally! Today marks the arrival of our first Pinzgauer x Holstein calf - a beautiful little heifer with distinct Pinzgauer markings from our Bull, Perseus! (White dorsal stripe and stomach) Pinzgauers are an Austrian Dual-purpose Breed that produce excellent proteins for cheese making, have great feed conversion rates from pasture only grazing, easy calving and docile nature plus they’re pretty Still working on a name for this little one - we need an ‘S’ name - suggestions welcome!

21.01.2022 No-one is more surprised than me - BUT HALLOUMI IS BACK!! I’ve only been asking Kel for 6 months if we would make Halloumi for Christmas (up until and including yesterday ) but apparently this morning felt right SO We have 100 units of Halloumi and once it’s gone I can 100% guarantee you I won’t know when it will be back

21.01.2022 Holy Cow (pun intended) - another week at full speed Fencing was delayed slightly when Kel found a beautiful python curled up in a hedge less than a metre from where he was working (I’ll add a pic in stories - see if you can spot it) He promptly downed tools and hid in his land cruiser for the rest of the day We had a bit of a fridge mishap last week but will be back at @carriageworksfarmersmarket tomorrow with plenty of cheese, yoghurt and gelato plus we’ll leave the onl...ine shop open till Sunday as I may have forgotten to restock it on time this week Enjoy the weekend! 20.01.2022 The delicious. Harvey Norman Produce awards have been announced - with Pearl receiving a Gold Medal in the Dairy section! We couldn’t be prouder of this cheese - one that we’ve worked really hard to refine over the last few years and we’re so honoured to be up there alongside some stellar dairy products. This year has been a SLOG and we’re in awe that the awards were able to proceed under a challenging set of circumstances - hats off to @lucy_allon and our national judges... @daniellemariealvarez @guillaumebrahimi @cfassnidge @chefmattmoran @chefpetergilmore @chefneilperry and the whole @deliciousaus team, with thanks to @harveynormanau. Also a huge congrats to @kiamafarmersmarket - named as a finalist in the Outstanding Farmers Market category! We’re so proud to be part of such a vibrant food community

14.01.2022 After the storm..... We’ve had a pretty big pause on social media. Call it a COVID related reassessment if you like, but truth be told it just felt like a far too curated space to be whilst we stripped the entire daily workings of our farm back to the core. ... We’re still here, working really hard to expand our knowledge on all things soil and regenerative farming. It may be a tentative return to social media but we hope you’ll stick around as we start to explore the massive shift thats been brewing in this little patch of the world

13.01.2022 Warm days, gentle rain, cell grazing and regenerative farming.

12.01.2022 Cell Grazing We’ve done a lot of fencing over winter to create a paddock system that allows us to manage our pasture more efficiently. The idea is to allow the pasture more time to recover after being grazed - removing the cows and preventing them from regrazing or even walking on them. The theory is larger groups of animals (preferably mixed species) for shorter periods of time. Looks like this little dairy may need to expand our menagerie!

10.01.2022 New week - New Paddock Our dry herd enjoying the lush gully after all the rain. This herd is comprised of cows that are resting, those that are pregnant and waiting to calve, two young heifers and a Bull named Percy We run them over our steeper hills as they don’t need to come home to be milked each day but still rotate their paddock frequently to provide optimum grazing and recovery time for the pasture. We walk through them every couple of days to check their condition, observe any amorous behaviour and make sure no-ones decided to do something silly - although on days like today, there was not one complaint

10.01.2022 This week has been a flurry of: Trying to get fencing done Moving young stock Managing stock levels Installing our new cheese press ... And racing to finish all the most pressing jobs before the weather closes out tomorrow We’re also madly prepping for our return to @carriageworksfarmersmarket - some of you may already know we are no longer supplying Milk into Sydney However, we will still be there with Cheese, Yoghurt and Gelato Oh, AND a reminder that our online shop is open until tomorrow night for those that want to order and collect from farm on Monday Phew - hope you all have a great weekend!

06.01.2022 These young heifers have certainly been enjoying the bountiful pasture! They’re all Holstein x Normande and part of our ongoing cross-breeding program. We give them a couple of years to mature before they will head out with the bull!

03.01.2022 PSA We have officially made the switch to using glass bottles This has been a long time goal of ours and one that we are so proud to have reached. It heralds a new season for us, where the majority of our milk is now going into cheesemaking (what!) and we’ve reduced the amount of milk we will be bottling as well as reducing the areas of distribution. We’re hoping by providing a reusable alternative to our local customers we will see the bottles being returned and reuse...d multiple times! How will it work : The milk will be available from the following outlets - Thirroul IGA Kiama Downs IGA Jamberoo IGA Gerringong IGA Manning General Store Kiama These stores are able to take back your empty Glass bottles (and Yoghurt Jars!) but aren’t able to refund you as it gets a little tricky - however! If you would like to be credited for your returned bottles and jars we welcome you to return them on farm each week or book in for a monthly collection. I’ll pop all the details up on the website but if you have any questions please feel free to pop them below or send them via DM!
