17.01.2022 Further proof that Im a terrible food plater and photographer, but I can cook! Tonight we had lamb and feta meatballs (AU Cookidoo) with tabouleh and some flat breads (just made a plain naan with parsley and garlic). The whole family (other than me, I know my limits ) went back for seconds and gave it a 10/10 These meatballs would also be great for lunchboxes!! 16.01.2022 Do you make your own spice mixes? We do now! This batch of taco seasoning will last us about six months and its made with just whole spices. No fillers, additives, preservatives or colours in this! I got my salts, paprika and chili powder/flakes from @grandmaspantry and will be buying all my spices from there from now on! They are incredible - so vibrant and you can smell the difference in their quality too. Its nachos night here! 10.01.2022 As we all adapt to new ways of working online and with minimal contact, Thermomix is no exception. Over the last couple of weeks Ive started delivery briefings via Messenger video and Zoom, and today completed my first ever virtual Cooking Experience! A great group of guests helped quash my nerves and we got there, smashing out bread rolls, beef and mushroom stroganoff, mashed potato and harlequin custard in 90 minutes. 07.01.2022 Youd be forgiven for thinking this was a pesto recipe... close - but not quite. Its the easiest all in one chicken pasta recipe Ive ever made - Im testing it as a cold salad for some catering/fundraising work next weekend so Im hoping itll be as delicious cold tomorrow, as it was hot tonight. 05.01.2022 First day back at school today for our family, and Xander heads back tomorrow - we need quick and easy comfort food!! Tonight were having @mylalakitchen creamy lemon butter magic one pot delicious chicken. Or its called something like that! I added a cup of rice, a cup of extra stock, doubled the spinach and added half a bag of beans (why cant we buy fresh ones at the moment??) to make it a true one dish meal so I can assemble it and put it in the oven, and then come back ...and have it fully ready to eat with no extras. 04.01.2022 If being a @thermomixaus consultant has taught me one thing, its that Thermomix mashed potato is a very contentious issue Some people LOVE the way that the Thermomix can create perfectly smooth, creamy and dreamy mash - but its not for me. Personally, the idea of cleaning mashed potato from my butterfly is not something Im interested in! I like mine with a little more texture and we mash with butter and sour cream here. But how cool is it that you have so many options?... A little bit more versatile than a potato masher!! I make my mash like this... - 1L water - simmering basket full of peeled and quartered potatos - 20 mins, varoma temp, speed 3 - discard water and place potatos in the bowl, add other ingredients to your taste (I use butter, sour cream, salt and pepper) - speed 3 for about 30 seconds til its mashed. Done! This batch tonight is going on shepherds pie Please tell us in the comments how you like your Thermomix mash?

03.01.2022 This weather!! Im feeling a bit off colour this week and a very caring and lovely friend/boss/mentor/super mum suggested that maybe I needed some chicken soup? Im not sure why I didnt think of that?! 40 minutes later Id steamed some chicken, inadvertently made chicken stock and was inhaling this, and it helped. So much!
