25.01.2022 If you enjoy browsing Indian food history, then you might have come across the story behind the introduction of the Dum Pukht method of cooking!! But, if you haven't yet... read this out (y) In 1784, during the great famine, the Nawab Asaf-ud-Daulah introduced a charitable initiative for his people with a food-for-work programme, employing thousands in the construction of the Bada Imambara shrine. The cooks used the method of Dum Pukht, wherein meat, vegetables, rice, and s...pices were put together in large vessels or handis, sealed with dough and left to slow cook for hours. This system of cooking proved to be the most convenient method of providing flavourful meals to a large number of workers. One day the Nawab caught a whiff of the aromas emanating from the dish and he ordered his shahi cooks to make the same dish in the royal kitchen. The Master Chefs implemented the same technique of Dum Pukht along with royal finesse.
