15.01.2022 Winemaking for us is about producing wines we like to drink. We make them in small quantities, and we make them interesting. Most people would call us lo-fi winemakers. We intervene minimally. Our small batch ‘Santolin’ wines, are left to ferment naturally. We prefer to let the fermentation run wild, creating grape symphonies and fruity supernovas. Fining agents are not added. Our wines are vegan friendly. You should be able to taste the Valley in there. We still foot-sto...mp and hand-plunge our pinot noir, to gently extract the colour from the grapes. Our wines are left to age in 100% French oak barrels, then matured in the bottle for maximum complexity. Like a really delicious cryptic crossword. We also like to experiment, and our 'Cosa Nostra' wines are a clear example of our love for all things unique and different. Interesting Italian blends, from lesser known regions in Victoria. Adventurous experimentation, teamed with our minimal winemaking philosophy best captures the unique and intrinsic nature of these alternative varietals and blends. The wine is juicy and gently tropical in the mouth, with good acid balance, the barrel use adds an extra layer to the flavour. Very long persistence. Delicious wine, not too dry and not too sweet. Slot this @santolinwines Il Capo Cosa Nostra into the 'comfort wine' category (if there was ever such a thing) Cosa Nostra translates to our thing, and like Red Foo, this 'could be my new thing'. Such a slurpable number, I'd be happy not to share it with anyone. Maybe I didn't?... A blend of Nero d'Avola and Negroamaro (82/18) which was sourced from Heathcote and Mildura respectively, I can't recall ever seeing a wine with these two varieties brought together. There's a buoyancy about the way the fruit glides through the mouth. It floats like a pontoon of sorts. Dangerously smooth, a blackberry jam sweetness teases before voluptuous black fruits and mulberries glow. Sauteed mushrooms and some earthiness add savoury interest as scents of violets and blue flowers defuse a pretty perfume. There's a real gravitating delish factor that I keep coming back to before fine ribbons of fine spice bound along and cruise through to a long and decadent finish. Only 25 bucks - pleasure doesn't have to cost a bomb. Go here. 93pts
