18.01.2022 Raclette (from the french verb racler meaning to scrape) is a semi-hard cheese made from cows milk and is most commonly used for melting. Native to parts of Switzerland and France, the traditional method of melting happens in front of an open fire, with the wheel of cheese facing the heat. Then the cheese is scraped off the melting side onto the diners plate. We serve a piece melting in a skillet, with sour dough toast, house-made fig jam, thinly sliced pear and hazelnuts. Delicious!
