25.01.2022 Truffle Season has definitely slowed down early this year, but a patch of Q. ilex oak trees yielded a good amount yesterday. Perfect for farm gate sales on a glorious weekend in the Yarra Valley. ( Also great for some long planned recipes and preservation experiments.)



24.01.2022 Now this is how to do Truffled Duck Salami! Build a tower of sliced truffle alternating with salami and allow to infuse. (no fake aroma like commercial versions). Very thin slices, didn't actually use all that much. And a baked truffled camembert with sourdough. -might have used a bit too much there, but still less retail value than the cheese A few more cheeses and a neighbour's Pinot for a nice evening.

24.01.2022 October truffle cooking started with some birthday truffle n cheese in the orchard ...and continued with more experiments through the month Fishy notes of Bottarga went well on truffled(frozen) duck egg, squid ink pasta Truffle(stored) quiche and another cheese board *sous-vide Roulades on duck egg gnocchi (strd & frz #truffles) *Haloumi & Hoki (strd)... *Blood Orange tarts (frz) *Tiramisu (frz) #vegetarian Truffle salad, Fennel, Frisée, Fontina (Emmental) with truffled vinegarette (grated frzn truffle into the oil) and all variants of #ballotine chicken work wonderfully with snap-frozen truffle! ...a productive month of food experiments

22.01.2022 Slow cooked pea & ham soup, perfect for breakfast. Truffle boosts overall flavour, but doesnt stand out like with pumpkin soup. But with spare truffle at hand, a bit more is easily added. With nice frosts last week, harvest volume will now increase rapidly. @ Yarra Valley Truffles



22.01.2022 Continuing the fish experiments, I've long expected truffle will work with Sushi. It was a bit difficult to source, but Tuna steaks and Kingfish (cutlets) resulted in some useable meat for sushi & sashimi (and some messy sashimi offcuts) Results were a definite success, possibly more truffle effect with the Tuna as expected, but I still prefer Kingfish sashimi. I'll try again in future. Tamago egg will work wonderfully, even as a desert dish elsewhere I suspect, but I'll play with that later. Kingfish leftovers were appreciated!

21.01.2022 Finding truffles that are growing exposed, before the insects do is very important. Clearing away leaves and nuts helps find them, and the lime marks (as placed in previous post) make it easier to not step on dozens of truffles as you work around the trees. Fully exposed truffles must be covered with dirt immediately. This one already has a small hole eaten in it by a millipede #workfaster... @ Yarra Valley Truffles

" Truffles are still forming with some hazelnut wide cracks on some mounds, this one is likely cricket ball sized and deep. Exposed truffles are likely to be eaten by insects. Two fresh holes, left contained a slug, right has a millipede. a fresh new reddish skinned truffle was covered, and the older one was undamaged but removed, too small to bother with. @ Yarra Valley Truffles

20.01.2022 My fault for doubting Lani. Lagotto claws are effective truffle dicers She insisted there was a truffle under the disturbed dirt piles from last week. I couldn't smell it, so I told her to dig it up. A nice truffle before incoming rain shuts down harvesting for a few days. As Spring approaches, the grass around inactive trees is going to need cutting soon. Truffle Brie I peeled this truffle traditional style, before leaving sit for a few days. 10g into the cheese. @ Yarra Valley Truffles

19.01.2022 First of the truffles, with some pale junk pictured in the bag last of the Birch boletes. Ive wanted to taste the combination for a long time. It worked a little bit, I would even buy good truffle if there was any available in Australia at this time. But as this shows, even some reasonable colour, some aroma, & 50g/plate does not equate to truffle standard eating 6 week, home grown, dry aged veal oyster blade, bolar blade, and dry trim for truffle dog treats rough plati...ng, there was a touch of truffle taste with some umami enhancement of the boletes and superb meat. 16.01.2022 36 weeks until next Truffle Season This bridge was built in 1900 with several hundred tonnes of steel beams shipped from England which are stamped Dorman Long Pty Ltd, Middlesbrough, England. The abandoned railway line is now the Warburton Trail, and a great place to 'train' truffle dogs ... ...of course 35-36 weeks is post winter solstice, around start of July. For those that don't care if something's properly ripe, it's only 30 weeks until early May truffles are peddled around Australia...

13.01.2022 At last! Properly aromatic truffles! A mixed basket of the first good truffles and early-truffles (which are ok when used properly) Only broke one, which displays the great colour and aroma we've been waiting for! As expected since the first early-truffles appeared at start of June, we will open our farm gate sales this weekend. Recent frosty mornings have nearly completed leaf drop. Which need to be removed, or too many Truffles will be stepped upon as hunting gets into full swing. @ Yarra Valley Truffles

Less clear when the grass is mown, but easier to spot truffles. Checking the depth, this new truffle will need some extra soil cover to improve chance of survival.

12.01.2022 As Melbourne finally realises a relaxation of covid lockdown measures, it's time to unlock the last of the not-so-fresh truffle from some very successful storage experiments over past few months. Harvested in late August, it is still worth eating, and still better than typical early season or mass market {cheap} offerings. 11.01.2022 An area of the truffiére that produces mostly small truffles, perfect for online sales. At this time of year, and last week's warmer weather, survivability drops rapidly. There are a few left ripening in this patch for next week, possibly a little longer There are some growers who believe leaving Truffle in ground due to a bad market this year, will lead to more next season. Not quite, it leads to more insects, not truffles! Fungus gnat larvae @top of trowel, simply rotte...n below, and mouldy Truffle to the right (mostly due to warm weather damage or half a week over ripe) This is one missed last year by both dogs & insects, they don't grow bigger either The good truffles from this quick hunt yesterday. 10-60g for online orders, delivering today. The smaller shrapnel and unsold is going into a product development idea. @ Yarra Valley Truffles

11.01.2022 I did expect to have success finding a few end of season Truffles for rissotto tonight. But I did not expect a fresh duck egg laid in the open on the wall of the dam! The small nibbled truf was actually exposed on surface.. ...a miracle of survival and smells after a trim. The cut surfaces do show some blurring of marbling usual at season end The other reason for hunting a was removing some more of the unharvested truffle for use during spring aeration rather than feedin...g insects. {Although the small one looks like some often marketed cheap, round, black, odourless } See more

10.01.2022 Birch boletes! Related to porcini, but growing on Silver Birch trees. They can compete with a truffle dish for flavour, and... it really is as simple as foraging with a basket in the morning. Whereas a cultivated truffle orchard requires a full years work for a viable harvest. {30 hours/kg last year} It's been five years since the last good harvest of boletes though, but now I understand why and can help them grow well in future. My local patch of saffron milkcaps has also started producing. @ Yarra Valley Truffles

Sous vide: Scallops, Quail spatchcock vs boned Absolutely divine! Duck egg with gnocchi, & infused smoked salmon. Boned turkey leg vacuum infused smoked trout ...and an end of season dog excursion, a flooded creek from the season ending rainfall

09.01.2022 As Stage 3 & 4 restrictions in August have cancelled any prospect of an income this season, we thought we'd better have Christmas before that's cancelled too! Turkey for two, 50g Truffle under the skin (10g/kg is about right for roast poultry) As I often say, it's easier to keep a turkey until truffle season, than keep a truffle until Christmas. But this year I might have the answer. It's also four years since we found our 1.5kg record breaking truffle! @ Yarra Valley Truffles

09.01.2022 The ground is swelling and cracking as the truffle below enlarges. It has also pushed a smaller sibling up and out of contact with the soil. The reddish skin indicates recent growth and becomes darker within a few weeks.

07.01.2022 Truffle, duck egg, gnocchi. A successful new technique for freezing truffle last winter led to a dish worth eating 4 months later! It worked for some vodka too. I'm hoping to get some freshly imported European truffle soon though for some further experiments.

02.01.2022 Why on a takeaway pizza? Because I can. It added a little flavour, but basically a waste of over 20g Truffle. Like most (not quite all) shaved on top usage of Black Truffle it was a very mediocre result. A proper way to use a good truffle, an 11g truffle 50/50 under skin of two chicken breasts made a fantastic chicken meal. The second 10g Truffle from the small online portion could make a great mashed potato another night, or suit a dozen scrambled eggs. @ Yarra Valley Truffles
